Margheritine di Stresa - Stresa little dasies


Che Natale sarebbe senza biscotti? L'atmosfera che si crea nella casa pervasa dal profumo dei dolcetti che cuociono in forno è assolutamente fantastica e le loro forme allegre e divertenti riescono proprio a strappare un sorriso anche a chi, come me, non ama molto le abbuffate natalizie con i parenti e non vede l'ora che questi giorni scivolino via.
Quest'anno ho voluto fare le margheritine di Stresa, postate qui da comida de mama. Non smettero' mai di ringraziarla per questo post: sono i biscotti da tè piu' buoni che io abbia mai mangiato!

What kind of Christmas should be a Christmas without cookies? The atmosphere created by their smell while they're in the oven is absolutely unique and their funny shapes manage to steal a smile also to those persons like me who don't like the huge and time expensive lunches with relatives and that wait for these days to pass fast away.
This year I've done the wonderful margheritine di Stresa (Stresa little dasies) posted here by Comida de mama. I'll never stop to thank her for that post: they are the best tea cookies I've ever eaten!



Margheritine di Stresa
Ingredienti
  • 125g di burro
  • 60g di zucchero a velo
  • 100g di farina
  • 100g di fecola
  • 2 tuorli di uova sode
  • 1/2 bustina di vanillina
  • 1/4 di buccia di limone grattuggiata
  • un pizzico di sale

Stresa little dasies
Ingredients
  • 125g butter
  • 60g icing sugar
  • 100g flour
  • 100g potato flour
  • 2 hard boiled eggs yolks
  • 1/2 vanillin powder
  • 1/4 grated lemon zest
  • a pinch of salt




Mescolare burro, zucchero, buccia di limone, il sale e la vanillina fino ad ottenere un impasto omogeneo. Sbriciolare i tuorli sodi delle uova e mescolare fino ad ottenere una pasta morbidissima e gialla.
Unire farina e fecola mescolate insieme. Quando l'impasto sarà completamente uniforme riporlo in frigorifero per una mezz'oretta per farlo raffreddare.
Su un piano infarinato stendere la pasta con un mattarello spessa piu' o meno 1cm.
Tagliare con i tagliabiscotti, mettrli su una placca da forno rivestita di carta da forno e,a forno già caldo cuocere i biscotti per 10 minuto a 220°C.
Lasciate raffreddare e spoleverizzate con zucchero a velo.

Mix butter, sugar, lemon zest, salt and vanillin till the mixture is homogeneous. Crumble the hard boil eggs yolk and mix till the dough is yellow and soft. Add flour and potato flours and continue mixing till homogeneous.
Put the dough to rest in the fridge for about half an hour and then stretch the dough with a rolling pin till obtain a 1cm thick layer. Cut with the cutters an put to cook in a oven, pre-heaten to 220°C for 10 minutes.

Palline al cocco -coconut sweets


Eccoci qui: il Natale è davvero alle porte e in questo periodo devo dire che inviti a feste, pranzi e cene si verificano piuttosto spesso.
Il tempo purtroppo non è mai abbastanza per preparare cose elaborate e gustose per cui, almeno per la festa con i colleghi, ho ripiegato su dei dolcetti molto buoni e, soprattutto, semplicissimi da preparare.
Avevo trovato la ricetta sul web qualche annetto fa a questo link e non mi hanno mai delusa

Here we are: Christmas is coming and, as usual in this period of the here, invitations to parties, lunches and dinners are really frequent. Unfortunately I've not so much spare time so I cannot cook some elaborate things so, for the party with my colleagues, I've prepared some very good but also very simple to be prepared sweets.
I've found this recipe many years ago at this link and I've cooked these coconut sweets a lot of times: they always had success...



Palline al cocco

Ingredienti
  • 300g di ricotta
  • 80g di farina di cocco + altra per decorare
  • 150g di zucchero
  • 40g di cacao amaro
  • 3 cucchiai di marsala

Coconut sweets

Ingredients
  • 300g ricotta cheese
  • 80g coconut flour + some to decorate
  • 150g sugar
  • 40g cocoa
  • 3 tablespoons marsala



In una terrina, lavorare la ricotta e lo zucchero sino ad ottere un composto morbido e cremoso, del tutto privo di grumi. Aggiungere il cacao, 80g di farina di cocco e, per ultimo, il liquore. Tutte le volte che si aggiunge un ingrediente è necessario mescolare bene per ritornare ad ottenere un composto omogeneo, dopo di che si può aggiungere l'ingrediente successivo.
Mettere in frigorifero il composto per almeno un'ora, dopo di che formare delle palline di impasto e rotolarle nella farina di cocco rimasta. Conservare i dolcetti in frigorifero.

Mix in a bowl ricotta and sugar till the mix is soft and creamy. Add cocoa, 80g cocoa flour and marsala mixing well after the adding of each new ingredient put in the bowl. Put the compound in the fridge for 1 hour at least, then make some little ball and roll them in the remaining coconut flour. Preserve the sweets in the fridge.

Veggie sushi - sushi vegetariano


Questa settimana avevo bisogno di qualche cosa di nuovo!
Il tempo non aiuta certo a stare allegri: è tutto grigio grigio e l'alternarsi di neve e pioggia non fa venir voglia di uscire.
Poi il Natale si sta avvicinando e quindi inizia quella frenetica corsa ai regali che io tanto odio...
Insomma, ho bisogno di scappare lontano e quindi mi sono cimentata in un piatto giapponese-californiano che avevo assaggiato qualche anno fa quando ero transitata dalle parti di Orange County. Il giapponese si vede dal fatto che è sushi, mentre il californiano dal fatto che è vegetariano. Purtroppo non è così facile trovare del pesce crudo affidabile qui a Pavia...

This week I needed something different!
The weather has been really awful: it's all grey and snow and rain alternate so that I'm not looking forward to go out if it's not necessary.
Christmas is coming and anyone is involved in the gift rush that I hate.
So, I really needed to go far away and, since it's impossible for me to leave now, I tried to leave with my mind and with my kitchen reproducing a recipe coming from Japan (sushi) and California (veggie). Unfortunately it's too difficult to find the right raw fish here in Pavia...



Sushi vegetariano

Ingredienti
  • 2 tazze di riso da sushi
  • 2.75 tazze di acqua
  • 1/4 avocado
  • 1 carota
  • 2 uova
  • 4 cucchiai di aceto di riso
  • qualche foglio di alga nori
  • salsa di soia
  • zucchero
  • sale
  • sake

Veggie sushi

Ingredients
  • 2 cups sushi rice
  • 2.75 cups water
  • 1/4 avocado
  • 1 carrot
  • 2 eggs
  • 4 tablespoon rice vinegar
  • some nori
  • soy sauce
  • sugar
  • salt
  • sake



Lavare bene il riso da sushi sotto l'acqua corrente sino a quando l'acqua non sarà piu' resa opaca dall'amido. Una volta effettuato il lavaggio, il riso va messo a riposare per 30 minuti in acqua nella pentola in cui avverra’ la cottura. Nel frattempo si puo' preparare il ripieno tagliando a julienne le carote, il cetriolo e l'avocado. Siccome le carote sono un po' dure le si può cuocere per una decina di minuti in una mistura ottenuta con dashi (io non l'ho trovato e quindi ho usato del brodo di pollo), un cucchiaio di salsa di soia e un cucchiaio di zucchero.
Preparare una frittatina, chiamata tamago yaki, mescolando le uova insieme a 1 cucchiaino di zucchero, mezzo cucchiaino di sakè e 1/4 di salsa di soia. Una volta fritta, tagliarla a striscioline.
Trascorso il periodo di riposo del riso, aggiungere un pizzico di sale e portare il riso a bollire a pentola scoperta e, appena raggiunto il bollore, coprire con il coperchio avvolto in un canovaccio e proseguire la cottura a pentola chiusa sino a quando il riso ha appena oltrepassato la fase ”al dente”. Lasciar riposare il riso cotto per una decina di minuti, mentre si prepara la marinatura mischiando aceto di riso, zucchero e un cucchiaino di sale scaldando sino a quando zucchero e sale si sono dissolti nel liquido.
Stendere il riso su un tagliere e versare su di esso la marinatura mescolando velocemente senza rompere i chicchi di riso. Si dovrebbe ottenere un riso molto lucido e appiccicoso.

Stendere un foglio di alga nori, spandere su di esso il riso in modo da intravvedere il verde dell'alga tra i chicchi. Mettere al centro le verdure e la frittatina e arrotolare. Appoggiare il rotolo in modo che il suo stesso peso lo sigilli.
Bagnare un coltello affilato con acqua fredda e tagliare il rotolo a rondelle.

Wash the rice till water is transparent and starch doesn't make it murky any more. Put the rice with water in the pan you will use to cook it and leave it to rest for 30 minutes. In the meantime, cut the veggies a julienne and cook the carrots in a mixture made up with dashi (I've not found it and I've used chiken stock instead), a tablespoon of soy sauce and a tablespoon of sugar for 10 miinutes.
Prepare a tamago yaki (omelette) beating and frying the eggs with a teaspoon of sugar, half a teaspoon of sakè and a quarter of teaspoon of soy sauce. Once fried cut it a julienne.
Add a pinch of salt to the rice and boil it without covering the pan. Once the rice is boiling wrap the pan lid with a dishcloth and continue to cook covering the pan until the rice has just passed the "al dente" status. Switch the fire off and let the rice rest for 10 minutes. In the meantime prepare the marinade mixing rice vinegar, 2 tablespoons of sugar and a teaspoon of salt till all is melted.
Put the rice on a wooden cutting board pouring on it the marinade. Mix without breaking rice grains and making the rice cold very fast. You'll obtain a shiny and stiky rice.
Put some rice on a nori sheet so that it's possible to see some green between the rice grains. Put at the center the julienne cut vegetables and roll. The roll is sealed by its own weight.
Use a sharp knife passed under cold water to cut the roll into pieces.

Risotto con asiago e timo


Che bello! Finalmente un week end lungo in cui riprendersi prima delle feste natalizie.
Devo dire che è un periodo in cui sono abbastanza stanca e quindi poter dormire per qualche giorno sino alle 8.00 del mattino non mi dispiace affatto... e poi rimane un po' di tempo per giocare in cucina e andare a zonzo per la città, senza dover sacrificare il week end a commissioni e faccende come invece succede di solito.
Oggi il maritone ed io abbiamo deciso di fare un esperimento: riprodurre una ricetta che abbiamo assaggiato tempo fa in un ottimo ristorante della città.
Buono buono buono buono buono!!!

That's great! Here in Italy the 8th of December is a national holiday so this one is a long week end and we can have some rest before Christmas holidays.
I have to say that in this period I'm quite tired so to wake up at 8.00 a.m. instead of 6.20 a.m. is really nice and the fact that there is some more time I can spend doing some cooking experiments or going around for the town is extremely pleasing.
Today my husband and I made one experiment: we tried to reproduce a recipe we tasted in a very good restaurant of the town some weeks ago.
The result was good, good, good, good...



Risotto con asiago e timo

Ingredienti per 2 persone
  • 150g di riso
  • 60g di asiago
  • 15g di burro
  • 1/4 di cipolla grossa
  • 1 bicchierino di vino bianco
  • brodo
  • 1 cucchiaino di timo in polvere
  • timo fresco

Risotto with asiago and thyme

Ingredients for 2 persons
  • 150g rice
  • 60g di asiago cheese
  • 15g di butter
  • 1/4 of a big onion
  • 1 small glass of white wine
  • stock
  • 1 teaspoon of thyme powder
  • fresh thyme



Fare un soffritto con il burro, la cipolla e il timo fresco tritati finemente.
Aggiungere il riso e farlo tostare per un paio di minuti. Versare il vino bianco e cuocere sino a quando è evaporato. Aggiungere quindi il brodo caldo sino a coprire completamente il riso e versare, sempre mescolando il cucchiaino con il timo in polvere.
Aggiungere un po' di brodo se quello già versato è evaporato prima che il riso sia cotto.
A cinque minuti dalla fine della cottura versare l'asiago tagliato a pezzettini e mescolare sino a quando non si è sciolto completamente

Fry lightly with butter onion and fresh thyme previously minced together.
Add rice and make it roast for a while. Pour the white wine and let it evaporate.
Add then some hot stock so that it covers all the rice and add the thyme powder. Keep on cooking and add some more hot stock if the one already poured has evaporated before the rice is cooked. Five minutes before the end of cooking put the asiago cheese cut into small pieces and mix until completely melted.

Muffins con carote e nocciole


A volte mi chiedo che cosa ho in testa mentre faccio la spesa. A casa preparo una lista cercando di pensare a cose che si possano preparare velocemente dato che la sera sono sempre piuttosto stanca e non ho molta voglia di spignattare, e poi... e poi al supermercato divergo e finisce che arrivo alla fine della settimana con il frigorifero che contiene cose di cui proprio non so che fare...
Oggi era la volta delle carote: frigo pieno di belle carotine arancioni.
Questa settimana, in mensa, le ho mangiate sottoforma di insalata, contorno al vapore, crema e ripieno e a casa il solo guardarle mi faceva venire la nausea. Ma erano lì, comprate da me...Vuoi mica buttarle via? E'così ho preso le mie belle carotine e ci ho fatto dei muffins morbidi morbidi. I muffins sono davvero buoni, ma credo che per almeno un mese non mangero' più carote...

Sometimes I wander what I have in my mind when I go to supermarket. I do a list of things I need to prepare fast dinners because when I come home after work it's late, I'm always very tired and I don't want to spend too much time cooking. Once at supermaket it happens that I buy also things that I've not planned to buy so I arrive at the end of the week with something in the fridge and no ideas on what to do with it.
Today there were carrots!
This week I've eaten carrots in too many different forms at the canteen of my office and only see them made me seek. But there, in the fridge I had carrots and I didn't want to throw them away.
At the end I've baked some muffins. They are really good and soft but I think I will not eat carrots any more in the next month!



Muffins con carote e nocciole

Ingredienti
  • 170g di farina 00
  • 150g di carote
  • 50g di nocciole sgusciate
  • 50ml di olio di semi di mais
  • 60g di zucchero di canna
  • 2 uova
  • 1/2 bustina di lievito
  • latte

Carrots and hazelnuts muffins

Ingredients
  • 170g flour 00
  • 150g carrots
  • 50g hazelnut kernels
  • 50ml maize oil
  • 60g brown sugar
  • 2 eggs
  • 8g baking powder
  • milk



Frullare insieme le carote e le nocciole. Aggiungere nel mixer anche le uova e l'olio e frullare sino ad avere una bella crema omogenea. Mischiare in una terrina farina, zucchero e lievito. Aggiungere il composto di carote e mescolare tutto assieme versando un po' di latte.
Mettere il composto nella teglia per muffins e infornare a 180°C per circa 25 minuti.

Whisk together carrots, hazelnuts, eggs and oil till obtain a homogeneous cream.
Mix flour, sugar and baking powder in a bowl. Pour the carrot mixture in the bowl with flour and mix everything adding some spoons of milk.
Put the mixture in a muffin mould and bake in the oven at a temperature of 180°C for about 25 minutes.

Crostata con pere ricotta e cioccolato


Sabato scorso è stata una giornata strana, passata a fare poche delle mille cose che ho in sospeso e a cercare di riportare tutto a posto. Tra le varie "cose fuori posto" c'erano una confezione di ricotta e delle pere tutte ammaccate. La prima era stata acquistata con l'intenzione di fare dei buoni dolcetti per salutare degnamente i miei colleghi prima di cambiare lavoro e le seconde erano state comperate belle e sane, ma si sa, le piste ciclabili di Pavia non sono proprio agevoli e... una botta di qua, una di là...si sono rovinate tutte.
Alla fine ho deciso di fare una bella crostata ispirandomi un po' alla ricetta che trovate qui.

Last Saturday has been a very strange day spent to do many of my pending business and to help to clear my mind.
I've left my work and I've started a new one. I wanted to greet my previous colleagues with some nice sweets done with ricotta cheese, so I bought some and left it in the fridge because I really had not time to prepare anything before leaving.
Moreover I had some bruised pears ruined by a trip on an awful bike path.
At the end I've decided to bake a tart inspired by this post.



Crostata pere ricotta e cioccolato

Ingredienti per la frolla
  • 210g di farina 00
  • 90g burro
  • 90g di zucchero
  • 1 uovo

Ingredienti per il ripieno
  • 400g di ricotta
  • 100g di zucchero
  • 1 uovo
  • 50g gocce di cioccolato
  • 3-4 pere

Ricotta pears and chocolate tart

Ingredients for butter crust
  • 210g flour 00
  • 90g butter
  • 90g di sugar
  • 1 egg

Ingredients for the filling
  • 400g ricotta cheese
  • 100g sugar
  • 1 egg
  • 50g chocolate chips
  • 3-4 pears



Impastare il burro ammorbidito con farina, zucchero e uovo sino ad ottenere una "palla" di pasta. Avvolgerla nella pellicola e lasciarla riposare in frigorifero mentre si prepara il ripieno.
Mescolare insieme ricotta e zucchero e, una volta ben amalgamati, aggiungere l'uovo e le gocce di cioccolato.
Sbucciare le pere e tagliarle a pezzettini piccoli. Aggiungerli alla crema di ricotta e mescolare delicatamente.
Estrarre la pasta dal frigorifero, tenerne da parte 1/3 e stendere il resto con il mattarello su un piano infarinato.
Ricoprire una teglia da crostata imburrata e infarinata con la pasta e bucherellare il fondo con una forchetta. Versare il ripieno e decorare la crostata con la pasta rimanente. Infornare a 180°C sino a quando la pasta inizia a colorarsi.

Mix together flour, sugar, egg and soften butter till obtain a homogeneous "ball". Wrap it in cling film and put it to rest in the fridge while preparing the tart filling.
Mix ricotta cheese and sugar till obtain a cream. Add egg and chocolate chips.
Peal the pears and cut them into small pieces. Add them to the ricotta cream and mix softly.
Take the pastry out of the fridge and put away 1/3of it. Roll out the remaining pastry and cover a tart pan previously greased with butter and dusted with flour. Make some little holes with a fork and fill with the ricotta cream. Decorate with the remaining pastry and put in the oven at 180°C till coloring.

Crema di funghi


Piove, piove, piove...
E' vero che è autunno e che è giusto che piova, ma dopo una settimana passata a schivare gli schizzi delle macchine che passano a tutta velocità sulle pozzanghere, ho davvero voglia che torni il sole.
Però, se piove, crescono i funghi! E io amo i funghi!!!
Questa crema è davvero delicata e può essere fatta con i funghi che uno preferisce. Certo, con i porcini è molto più gustosa, ma anche con i funghetti bianchi coltivati che fanno capolino dai banconi del supermercato (non riesco mai a ricordarmi il nome) ha il suo perchè!

Rain, rain, rain...
Ok, it's Autumn, but after a whole week spent avoiding puddles and cars that spatter muddy water passing on puddles, I really need sun!
But Autum + rain = mushrooms and I love mushrooms!!!
This soup is very delicate and it can be done with all the mushrooms one prefers. Off course with ceps it's much tastier, but even with those little white mushrooms you can find in supermarkets (I don't manage to recall their name) is good.



Crema di funghi
Ingredienti(2 persone)
  • 250g di funghi freschi
  • 625g di latte
  • 25g di maizena
  • burro
  • sale
  • pane

Mushroom soup
Ingredients(2 persons)
  • 250g fresh mushrooms
  • 600g milk
  • 25g cornflour
  • butter
  • salt
  • bread


Portare ad ebollizione 500g di latte e tagliare i funghi a pezzetti. Quando il latte bolle far cuocere i funghi per cinque minuti. Togliere dal fuoco e frullare il tutto. Sciogliere la maizena nei restanti 125g di latte e aggiungere il composto a quello con i funghi. Salare a piacere e riportare ad ebollizione. Cuocere per un quarto d'ora e, una volta passato questo tempo, condire con un po' di burro. Mentre la crema cuoce, preparare i crostini facendo tostare dei pezzettini di pane in una padella su cui è stata fatta sciogliere una noce di burro.
Servire calda.

Bring to boil 500g of milk while cutting mushrooms in small pieces. When the milk is boiling throw the mushrooms in it and keep on cooking for five minutes. Whisk everything and add salt and cornflour melted in the remaining 125g of milk. Bring to boil for other fifteen minutes while preparing croutons toasting pieces of bread in a pan with melted butter on it. When the soup is ready add some butter and serve hot.

Halloween pavese: le pangialdine


In questo periodo dell'anno, andando a zonzo per la città e sbirciando nelle vetrine delle panetterie, non si può fare a meno di imbattersi nelle pangialdine.
Sono dolci semplici e tradizionali del pavese e di parte del milanese (dove vengono chiamate pan de mei o pan meino) tipiche del periodo dei morti. In realtà la tradizione dice che questi biscottoni dorati fossero preparati il 23 o il 24 aprile, giorno di San Giorgio, per consumarli insieme alla panna fresca che i lattai, in segno di festeggiamento per il loro santo protettore, distribuivano gratuitamente. Chissà poi perchè sono diventate il dolce simbolo del primo novembre...

In this period of the year, going around for the town and looking into the bakeries windows, it's impossible not to see the "pangialdine".They are home made and traditional "cookies" from Pavia and Milan counties (In Milan they are called "pan de mei" or "pan meino") sold during Halloween time. Originally these golden big cookies were prepared on 23rd or 24th April, Saint George's day, to be eaten together with fresh cream that milkmen distributed to celebrate their patron saint. Who knows why they are sold during this season now?


Pangialdine
Ingredienti per 8 biscottoni
  • 250g di farina 00
  • 150g di farina gialla
  • 2 uovo
  • 100g di burro
  • 100g di zucchero
  • 1/2 bustina di lievito
  • latte

Pangialdine
Ingredients for 8 big cookies
  • 250g flour 00
  • 150g maize flour
  • 2 eggs
  • 100g butter
  • 100g sugar
  • 8g baking powder
  • milk


Ammorbidire il burro a temperatura ambiente. Mescolare insieme burro, zucchero e uova sino ad ottenere un impasto omogeneo. Frullare la farina gialla per renderla più fine e setacciare insieme le due farine e il lievito e aggiungerle a cucchiaiate al composto di burro. Se si fa fatica a mescolare, aggiungere un goccino di latte, ma non molto. Foderare una teglia con carta da forno e posizionare su di essa l’impasto a cucchiaiate. Cospargere con abbondante zucchero a velo e infornare a 170°C per 30-35 minuti.
Sfornare e far raffreddare su una gratella.

Let the butter soften at room temperature and then mix together butter, sugar and eggs until the mixture results homogeneous. Whisk the corn maize in order to refine it and mix it together with flour an baking powder. Add spoons of the dry mixture to the wet one using some milk (not too much) if it's difficult to mix with a wooden spoon.
Put spoons of dough on a greaseproof paper sheet and put some icing sugar on it.
Bake at 170°C for 30-35 minutes and then put to cold on a grill.

Gnocchi di zucca al timo


Qualche settimana fa, per salutare un nostro amico in partenza per l'Olanda, siamo andati in una trattoria qui vicino e, tra gli altri piatti, abbiamo gustato degli ottimi gnocchi di zucca e timo. Ieri mattina, quando al farmer's market locale ho visto delle bellissime zucche in esposizione, proprio non ho saputo resistere e quindi ecco qui gli gnocchi!
La prossima volta credo che aumenterò un pochino la quantità di zucca e ridurrò quella di patate altrimenti il sapore caldo e dolce della zucca rimane un po' nascosto...


Some weeks ago, one of our friends left Italy to move to The Netherlands and, to greet him, we went to a restaurant where we ate, among other things, some wonderful pumpkin dumplings with thyme.
When Yesterday morning I went to the local farmer's market and saw some gorgeous pumpkins I really couldn't resist and so here there are the dumplings!
Maybe it's better to reduce the quantity of potatoes and increase that of pumpkin in order to better appreciate the warm and sweet pumpkin taste



Gnocchi di zucca al timo
Ingredienti
  • 350g di zucca
  • 350g di patate
  • 1 uovo
  • 300g di farina 00
  • sale
  • 1 cucchiaio di timo in polvere
  • burro, timo e parmigiano per condire

Pumpkin-thyme dumplings
Ingredients
  • 350g pumpkin
  • 350g potatoes
  • 1 egg
  • 300g flour 00
  • salt
  • 1 tbs thyme powder
  • butter thyme and parmesan cheese to dress


Lessare le patate e cuocere la zucca al vapore.
Una volta terminata la cottura delle verdure schiacciarle sino ad ottenere una purea omogenea. Aggiungere quindi sale, timo in polvere, uovo e farina. Impastare il tutto sino ad ottenere un composto uniforme.
Prendere un pezzetto di impasto e dargli la forma di un cilindretto su un piano infarinato. Tagliare a pezzettini e passare sui rebbi di una forchetta per creare le caratteristiche righine degli gnocchi.
Far cuocere buttando gli gnocchi in abbondante acqua salata sino a quando riemergono in superficie. Condire con burro fuso e timo fresco tritato. Spolverare di parmigiano e correre in tavola!!!

Boil potatoes and steam the pumpkin. Once the vegetables are cooked mash them uniformely.
Add salt, thyme powder, egg and flour and knead until homogeneous. Take some mixture and give it the shape of a cylinder rolling it on the working plain dusted with flour. Cut the cylinder in small pieces and roll them on a fork to give the typical stripe decoration to the dumplings.
Cook the dumplings throwing them in salted boiling water and waiting until they come up to the water surface. Dress with melted butter and fresh minced thyme. Sprinkle with parmesan and enjoy your meal!!!

Remembering Bruxelles - Lenti di cioccolato


Oggi mi è capitato più volte di ripensare alle mie vacanze estive, passate un po' in Belgio e un po' in Toscana.
Di solito cerco di assaggiare prodotti tipici dei luoghi che visito e a Bruxelles non è stato affatto difficile: ovunque ci sono negozietti che vendono praline e cioccolatini deliziosi sia al gusto sia alla vista.
Ho cercato di riprodurre delle "lenti" di cioccolato e frutta secca che avevo visto in una vetrina vicino alla Grande Place e il risultato mi ha davvero soddisfatta! Direi che questi cioccolatini, insieme ad un infuso di tiglio e ad un buon libro sono stati davvero un'ottima compagnia per la mia ultima domenica da single (il maritone ritorna!!!).
E poi basta sciogliere il cioccolato a bagno maria e formare delle "lenti" su un foglio di carta da forno, farci cadere sopra qualche frutto e far solidificare in frigorifero...

Today I've thought several times to my last summer vacations spent among Belgium and Tuscany. Usually I taste local products and dishes and in Bruxelles this wasn't difficult: you could find everywhere wonderful shops selling chocolate and pralines.
I've tried to reproduce some chocolate and nuts "lenses" I've seen in one shop window close to the Grande Place and the result was really good! These chocolates, together with a lime infusion and a good book, have been a pleasent company in my last Sunday spent as a single (my husband is coming back soon!!!). To have them you should simply melt the chocolate bain-marie, create the "lenses" on a greaseproof paper sheet and let some nuts fall on it before putting all in the fridge to solidify...

Pesto alla trapanese my way


Oggi mia sorella L. è venuta a pranzo a casa mia. Devo dire che in questo periodo, essendo a casa da sola, non vado spesso a fare la spesa e il mio frigorifero è quasi completamente vuoto.
C'era però un sacchetto di pomodori maturi che aspettavano di essere utilizzati per qualche cosa di appetitoso e quindi ho fatto un bel sughetto. Mi piace chiamarlo pesto alla trapanese anche se la vera ricetta prevederebbe le mandorle al posto delle noci e molto più aglio e basilico. Però a me piace molto così e poi la mia cucina è ancora invasa dal profumo di questo sughetto davvero rapido...

Today my sister L. came to my place for lunch. In this period, being at home on my own, I don't go really often to the supermarket and my refrigerator is nearly empty but in a corner there was a little bag full of ripe tomatoes and so I've decided to do a yummy sauce for pasta. I'm used to call it "pesto alla trapanese" even if the original recipe uses almonds instead of nuts and much more garlic and basil. But I really like it in this way and my kitchen is still full of this very fast sauce's perfume...

Pesto alla trapanese my way
Ingredienti
  • 3 pomodori maturi
  • 5 noci
  • 1/2 spicchio d'aglio
  • 8 foglie di basilico
  • sale & pepe
  • 1 cucchiaio di olio d'oliva

Trapanese Pesto my way
Ingredients
  • 3 ripe tomatoes
  • 5 nut kernels
  • 1/2 garlic clove
  • 8 basil leaves
  • salt & pepper
  • 1 tbs olive oil


Mettere nel frullatore i pomodori tagliati grossolanamente, il basilico, l’aglio e i gherigli di noce.
Frullare il tutto. Aggiungere sale, pepe e olio. Frullare ancora e... è pronto!

Put in the mixer all together tomatoes cut in a coarse way,basil leaves, garlic and nut kernels. Mix everything and then add olive oil, salt and pepper. Mix again and...it's ready!

Torta di mele super leggera


L'autunno è arrivato per davvero e questa mattina in cucina c'erano ben 17°C!!! Che freddo!!!!!!!!!
Considerando che accendere il forno non sarebbe stato così terribile e che avevo un po' di mele in piena crisi di invecchiamento precoce ho deciso di fare una bella torta.
Aperto il frigorifero, però, mi sono accorta di non avere burro per cui ho deciso di utilizzare una ricetta che non prevede nè burro nè olio che mi aveva passato qualche tempo fa una cugina di mio marito.
Il risultato non è proprio da esposizione, ma la torta non è male.

Autumn is definitely arrived and to defeat the cold temperature of my kitchen and get rid of some aging apples, I've decided to do an apple cake! Since I hadn't butter in my fridge I've decided to follow a very light recipe which doesn't use butter nor oil.
The result is not so beautiful, but taste is not bed at all!



Torta di mele super leggera
Ingredienti

  • 750g di mele
  • 100g di farina
  • 80g di maizena
  • 100g di zucchero
  • 1dl di latte
  • 2 uova
  • 1 bustina di vanillina
  • 1 bustina di lievito per dolci
  • 1 cucchiaio di marsala
  • cannella in polvere

The lightest apple cake ever
Ingredients

  • 750g of apples
  • 100g of flour
  • 80g of corn flour
  • 100g of sugar
  • 1dl of milk
  • 2 eggs
  • 1vanilla extract
  • 16g baking powder
  • 1 tablespoon marsala
  • cinnamon


Sbattere le uova a temperatura ambiente con 60g di zucchero sino ad ottenere un composto spumoso. Aggiungere,poco alla volta, farina e maizena precedentemente mescolate insieme aiutandosi con il latte quando il composto inizia ad essere duro da mescolare. Quando tutto sarà ben omogeneo, unire
vanillina, lievito e marsala.
Versare la pastella in una tortiera ricoperta di carta da forno e accendere il forno a 180°C. Sbucciare le mele e tagliarle a fettine sottili disponendole in strati sopra il composto. Una volta completato uno strato, cospargere con lo zucchero rimasto e la cannella in povere. Proseguire sino ad esaurimento mele cercando di disporre ordinatamente l’ultimo strato. Infornare per circa 40 minuti.

Beat the eggs with 60g of sugar till foamy. Add, slowly, flour and cornflour mixed together adding the milk when it is too hard to melt. When the mixture is homogeneous join vanilla extract, baking powder and marsala.
Pour the cream in a cake tin covered with greaseproof paper and switch the oven on at 180°C.
Peel the apples, cut them in thin slices and put them on different layers in the cake tin. Once a layer is finished sprinkle it with sugar and cinnamon. Continue in this way till the end of apples and then put in the oven for roughly 40 minutes.

Let's go!!!

Ci sono un po' di progetti che mi frullano per la testa e due di questi sono: migliorare il mio inglese e imparare a cucinare. Ecco perchè incomincio questo food-blog. Lo so, lo so, ce ne sono già troppi sulla rete, ma ho bisogno di un posticino dove riordinare le ricette sparse per casa per cui eccomi qui a scribacchiare, poco per volta, il mio ricettario in italiano e in inglese...
Ogni consiglio è ben accetto...

I've a lot of projects for this year and two of these are: improve my English and learn to cook. That's why I'm starting this food-blog even if I know that maybe there are too many food blogs already present on the net, but I need a place where collect all my recipes...So here I am to start my Italian/English cookbook!
