Halloween pavese: le pangialdine


In questo periodo dell'anno, andando a zonzo per la città e sbirciando nelle vetrine delle panetterie, non si può fare a meno di imbattersi nelle pangialdine.
Sono dolci semplici e tradizionali del pavese e di parte del milanese (dove vengono chiamate pan de mei o pan meino) tipiche del periodo dei morti. In realtà la tradizione dice che questi biscottoni dorati fossero preparati il 23 o il 24 aprile, giorno di San Giorgio, per consumarli insieme alla panna fresca che i lattai, in segno di festeggiamento per il loro santo protettore, distribuivano gratuitamente. Chissà poi perchè sono diventate il dolce simbolo del primo novembre...

In this period of the year, going around for the town and looking into the bakeries windows, it's impossible not to see the "pangialdine".They are home made and traditional "cookies" from Pavia and Milan counties (In Milan they are called "pan de mei" or "pan meino") sold during Halloween time. Originally these golden big cookies were prepared on 23rd or 24th April, Saint George's day, to be eaten together with fresh cream that milkmen distributed to celebrate their patron saint. Who knows why they are sold during this season now?


Pangialdine
Ingredienti per 8 biscottoni
  • 250g di farina 00
  • 150g di farina gialla
  • 2 uovo
  • 100g di burro
  • 100g di zucchero
  • 1/2 bustina di lievito
  • latte

Pangialdine
Ingredients for 8 big cookies
  • 250g flour 00
  • 150g maize flour
  • 2 eggs
  • 100g butter
  • 100g sugar
  • 8g baking powder
  • milk


Ammorbidire il burro a temperatura ambiente. Mescolare insieme burro, zucchero e uova sino ad ottenere un impasto omogeneo. Frullare la farina gialla per renderla più fine e setacciare insieme le due farine e il lievito e aggiungerle a cucchiaiate al composto di burro. Se si fa fatica a mescolare, aggiungere un goccino di latte, ma non molto. Foderare una teglia con carta da forno e posizionare su di essa l’impasto a cucchiaiate. Cospargere con abbondante zucchero a velo e infornare a 170°C per 30-35 minuti.
Sfornare e far raffreddare su una gratella.

Let the butter soften at room temperature and then mix together butter, sugar and eggs until the mixture results homogeneous. Whisk the corn maize in order to refine it and mix it together with flour an baking powder. Add spoons of the dry mixture to the wet one using some milk (not too much) if it's difficult to mix with a wooden spoon.
Put spoons of dough on a greaseproof paper sheet and put some icing sugar on it.
Bake at 170°C for 30-35 minutes and then put to cold on a grill.

Gnocchi di zucca al timo


Qualche settimana fa, per salutare un nostro amico in partenza per l'Olanda, siamo andati in una trattoria qui vicino e, tra gli altri piatti, abbiamo gustato degli ottimi gnocchi di zucca e timo. Ieri mattina, quando al farmer's market locale ho visto delle bellissime zucche in esposizione, proprio non ho saputo resistere e quindi ecco qui gli gnocchi!
La prossima volta credo che aumenterò un pochino la quantità di zucca e ridurrò quella di patate altrimenti il sapore caldo e dolce della zucca rimane un po' nascosto...


Some weeks ago, one of our friends left Italy to move to The Netherlands and, to greet him, we went to a restaurant where we ate, among other things, some wonderful pumpkin dumplings with thyme.
When Yesterday morning I went to the local farmer's market and saw some gorgeous pumpkins I really couldn't resist and so here there are the dumplings!
Maybe it's better to reduce the quantity of potatoes and increase that of pumpkin in order to better appreciate the warm and sweet pumpkin taste



Gnocchi di zucca al timo
Ingredienti
  • 350g di zucca
  • 350g di patate
  • 1 uovo
  • 300g di farina 00
  • sale
  • 1 cucchiaio di timo in polvere
  • burro, timo e parmigiano per condire

Pumpkin-thyme dumplings
Ingredients
  • 350g pumpkin
  • 350g potatoes
  • 1 egg
  • 300g flour 00
  • salt
  • 1 tbs thyme powder
  • butter thyme and parmesan cheese to dress


Lessare le patate e cuocere la zucca al vapore.
Una volta terminata la cottura delle verdure schiacciarle sino ad ottenere una purea omogenea. Aggiungere quindi sale, timo in polvere, uovo e farina. Impastare il tutto sino ad ottenere un composto uniforme.
Prendere un pezzetto di impasto e dargli la forma di un cilindretto su un piano infarinato. Tagliare a pezzettini e passare sui rebbi di una forchetta per creare le caratteristiche righine degli gnocchi.
Far cuocere buttando gli gnocchi in abbondante acqua salata sino a quando riemergono in superficie. Condire con burro fuso e timo fresco tritato. Spolverare di parmigiano e correre in tavola!!!

Boil potatoes and steam the pumpkin. Once the vegetables are cooked mash them uniformely.
Add salt, thyme powder, egg and flour and knead until homogeneous. Take some mixture and give it the shape of a cylinder rolling it on the working plain dusted with flour. Cut the cylinder in small pieces and roll them on a fork to give the typical stripe decoration to the dumplings.
Cook the dumplings throwing them in salted boiling water and waiting until they come up to the water surface. Dress with melted butter and fresh minced thyme. Sprinkle with parmesan and enjoy your meal!!!

Remembering Bruxelles - Lenti di cioccolato


Oggi mi è capitato più volte di ripensare alle mie vacanze estive, passate un po' in Belgio e un po' in Toscana.
Di solito cerco di assaggiare prodotti tipici dei luoghi che visito e a Bruxelles non è stato affatto difficile: ovunque ci sono negozietti che vendono praline e cioccolatini deliziosi sia al gusto sia alla vista.
Ho cercato di riprodurre delle "lenti" di cioccolato e frutta secca che avevo visto in una vetrina vicino alla Grande Place e il risultato mi ha davvero soddisfatta! Direi che questi cioccolatini, insieme ad un infuso di tiglio e ad un buon libro sono stati davvero un'ottima compagnia per la mia ultima domenica da single (il maritone ritorna!!!).
E poi basta sciogliere il cioccolato a bagno maria e formare delle "lenti" su un foglio di carta da forno, farci cadere sopra qualche frutto e far solidificare in frigorifero...

Today I've thought several times to my last summer vacations spent among Belgium and Tuscany. Usually I taste local products and dishes and in Bruxelles this wasn't difficult: you could find everywhere wonderful shops selling chocolate and pralines.
I've tried to reproduce some chocolate and nuts "lenses" I've seen in one shop window close to the Grande Place and the result was really good! These chocolates, together with a lime infusion and a good book, have been a pleasent company in my last Sunday spent as a single (my husband is coming back soon!!!). To have them you should simply melt the chocolate bain-marie, create the "lenses" on a greaseproof paper sheet and let some nuts fall on it before putting all in the fridge to solidify...

Pesto alla trapanese my way


Oggi mia sorella L. è venuta a pranzo a casa mia. Devo dire che in questo periodo, essendo a casa da sola, non vado spesso a fare la spesa e il mio frigorifero è quasi completamente vuoto.
C'era però un sacchetto di pomodori maturi che aspettavano di essere utilizzati per qualche cosa di appetitoso e quindi ho fatto un bel sughetto. Mi piace chiamarlo pesto alla trapanese anche se la vera ricetta prevederebbe le mandorle al posto delle noci e molto più aglio e basilico. Però a me piace molto così e poi la mia cucina è ancora invasa dal profumo di questo sughetto davvero rapido...

Today my sister L. came to my place for lunch. In this period, being at home on my own, I don't go really often to the supermarket and my refrigerator is nearly empty but in a corner there was a little bag full of ripe tomatoes and so I've decided to do a yummy sauce for pasta. I'm used to call it "pesto alla trapanese" even if the original recipe uses almonds instead of nuts and much more garlic and basil. But I really like it in this way and my kitchen is still full of this very fast sauce's perfume...

Pesto alla trapanese my way
Ingredienti
  • 3 pomodori maturi
  • 5 noci
  • 1/2 spicchio d'aglio
  • 8 foglie di basilico
  • sale & pepe
  • 1 cucchiaio di olio d'oliva

Trapanese Pesto my way
Ingredients
  • 3 ripe tomatoes
  • 5 nut kernels
  • 1/2 garlic clove
  • 8 basil leaves
  • salt & pepper
  • 1 tbs olive oil


Mettere nel frullatore i pomodori tagliati grossolanamente, il basilico, l’aglio e i gherigli di noce.
Frullare il tutto. Aggiungere sale, pepe e olio. Frullare ancora e... è pronto!

Put in the mixer all together tomatoes cut in a coarse way,basil leaves, garlic and nut kernels. Mix everything and then add olive oil, salt and pepper. Mix again and...it's ready!

Torta di mele super leggera


L'autunno è arrivato per davvero e questa mattina in cucina c'erano ben 17°C!!! Che freddo!!!!!!!!!
Considerando che accendere il forno non sarebbe stato così terribile e che avevo un po' di mele in piena crisi di invecchiamento precoce ho deciso di fare una bella torta.
Aperto il frigorifero, però, mi sono accorta di non avere burro per cui ho deciso di utilizzare una ricetta che non prevede nè burro nè olio che mi aveva passato qualche tempo fa una cugina di mio marito.
Il risultato non è proprio da esposizione, ma la torta non è male.

Autumn is definitely arrived and to defeat the cold temperature of my kitchen and get rid of some aging apples, I've decided to do an apple cake! Since I hadn't butter in my fridge I've decided to follow a very light recipe which doesn't use butter nor oil.
The result is not so beautiful, but taste is not bed at all!



Torta di mele super leggera
Ingredienti

  • 750g di mele
  • 100g di farina
  • 80g di maizena
  • 100g di zucchero
  • 1dl di latte
  • 2 uova
  • 1 bustina di vanillina
  • 1 bustina di lievito per dolci
  • 1 cucchiaio di marsala
  • cannella in polvere

The lightest apple cake ever
Ingredients

  • 750g of apples
  • 100g of flour
  • 80g of corn flour
  • 100g of sugar
  • 1dl of milk
  • 2 eggs
  • 1vanilla extract
  • 16g baking powder
  • 1 tablespoon marsala
  • cinnamon


Sbattere le uova a temperatura ambiente con 60g di zucchero sino ad ottenere un composto spumoso. Aggiungere,poco alla volta, farina e maizena precedentemente mescolate insieme aiutandosi con il latte quando il composto inizia ad essere duro da mescolare. Quando tutto sarà ben omogeneo, unire
vanillina, lievito e marsala.
Versare la pastella in una tortiera ricoperta di carta da forno e accendere il forno a 180°C. Sbucciare le mele e tagliarle a fettine sottili disponendole in strati sopra il composto. Una volta completato uno strato, cospargere con lo zucchero rimasto e la cannella in povere. Proseguire sino ad esaurimento mele cercando di disporre ordinatamente l’ultimo strato. Infornare per circa 40 minuti.

Beat the eggs with 60g of sugar till foamy. Add, slowly, flour and cornflour mixed together adding the milk when it is too hard to melt. When the mixture is homogeneous join vanilla extract, baking powder and marsala.
Pour the cream in a cake tin covered with greaseproof paper and switch the oven on at 180°C.
Peel the apples, cut them in thin slices and put them on different layers in the cake tin. Once a layer is finished sprinkle it with sugar and cinnamon. Continue in this way till the end of apples and then put in the oven for roughly 40 minutes.

Let's go!!!

Ci sono un po' di progetti che mi frullano per la testa e due di questi sono: migliorare il mio inglese e imparare a cucinare. Ecco perchè incomincio questo food-blog. Lo so, lo so, ce ne sono già troppi sulla rete, ma ho bisogno di un posticino dove riordinare le ricette sparse per casa per cui eccomi qui a scribacchiare, poco per volta, il mio ricettario in italiano e in inglese...
Ogni consiglio è ben accetto...

I've a lot of projects for this year and two of these are: improve my English and learn to cook. That's why I'm starting this food-blog even if I know that maybe there are too many food blogs already present on the net, but I need a place where collect all my recipes...So here I am to start my Italian/English cookbook!
