Cialde! - Waffles!

Circa tre anni fa, in preda ad un raptus culinario, ho acquistato un ferro per cialde e ho subito tentato di produrre questi bei biscottoni seguendo la ricetta che accompagnava il ferro: un enorme disastro! La pastella, decisamente troppo liquida, si è sparsa ovunque e per ripulire la cucina ci ho messo un sacco di tempo. Senza contare la delusione che mi ha accompagnata per tutto il giorno. Poi, per tre anni, piu' nulla.
Qualche settimana fa pero', mia sorella mi ha mandato un link alla "Cucina Italiana" dove c'era una ricetta per la pastella e quindi ci ho riprovato. Questa volta le cialde sono venute e, accompagnandole con gelato, marmellata o panna montata, è stato davvero un successone.
Devo lavorare ancora un po' sulla cottura: nella foto ci sono cialde di colori diversi, ma cio' che cambia è solo la durata del tempo di cottura...

Roughly three years ago I bought an iron mould to make waffles and I tried to do them immediately after following the recipe suggested on the iron package: a terrible mess! The batter was too liquid and it spread all around in the kitchen. I was very disappointed and I spent a lot of time cleaning the mess. For the following three years I've completely forgotten the iron. Some weeks ago my sister sent me a link to the "Cucina Italiana" where I found a different recipe and I tried it: wonderful!!! These waffles are perfect to side a cream gelato or to be tasted with jam.
I still have to work on cooking time: in the picture you can see waffles with different colors cooked for different times.



Cialde

Ingredienti
  • 120g farina
  • 75g zucchero semolato
  • 40g latte
  • 1 uovo
  • 40g burro
  • sale

Waffles

Ingredients
  • 120g all purpose flour
  • 75g caster sugar
  • 40g milk
  • 1 egg
  • 40g butter
  • salt



Mescolare con una frusta l'uovo, la farina, lo zucchero e un pizzico di sale. Aggiungere il latte a filo e, per ultimo, il burro fuso freddo. Mescolare sino a quando la pastella sarà del tutto priva di grumi.
Nel frattempo, ungere con un po' d'olio il ferro e scaldarlo bene sul fuoco per circa due minuti. Eliminare l'olio in eccesso con un tampone di carta da cucina.
Mettere una cucchiaiata di pastella al centro del ferro, chiudere e cuocere a fuoco basso per circa due minuti per lato.
Sformare la cialda e darle laforma che si vuole quando è morbida.

Whisk the egg together with flour, sugar and a pinch of salt. Add milk and, at the and, cold melted butter.
Continue to whisk until without lump.
In the meantime, oil the iron and heat it up on the fire for nearly two minutes then remuve the oil using some kitchen paper. Put a spoon of batter at the center of the hot iron, clos and cook on a very low fire for two minutes per side.
Extract the waffle from the iron and model it in the shape you want when still soft.

Pane e prosciutto - bread with parmesan and ham


Poco tempo fa ho trascorso un week end a Parigi e le fantastiche boulangeries francesi mi sono proprio rimaste nel cuore.
Se poi si considera che il profumo del pane appena sfornato è una delle cose che preferisco, si capisce come domenica mattina io non abbia resistito alla tentazione e mi sia improvvisata fornaia con questa ricetta di pane al parmigiano e prosciutto che ho trovato nel ricettario Kenwood chef.

Few days ago I spent a week end in Paris and I still have in my heart the wonderful French bakeries.
If you consider that I absolutely adore the sent of a bread loaf just come out of the oven, you can easily understand how I couldn't help to become a Sunday morning baker cooking this wonderful parmesan and ham bread.
I've found the recipe on the kenwood chef book.



Pane al parmigiano e prosciutto

Ingredienti per 2 pagnotte
  • 450g farina tipo 0
  • 50g parmigiano grattuggiato
  • 1/2 cucchiaio di sale
  • 1/2 cucchiaino di pepe nero
  • 12.5g di lievito di birra fresco
  • 1 cucchiaio di olio d'oliva
  • 250ml di acqua tiepida
  • 70g di prosciutto

Parmesan and ham bread

Ingredients for 2 loaves
  • 450g durum wheat flour
  • 50g grated parmesan cheese
  • 1/2 spoon of salt
  • 1/2 teaspoon grated pepper
  • 12.5g yeast
  • 1 spoon olive oil
  • 250ml warm water
  • 70g ham



Impastare bene farina, parmigiano, sale, pepe, lievito e olio aggiungendo l'acqua tiepida gradualmente in modo da potersi fermare se i 250ml indicati sono troppi o da aggiungerne se troppo pochi. L'impasto dovra' risultare omogeneo ed elastico.
Lasciare lievitare al caldo per circa un'ora in modo da veder raddoppiato il volume.
Portare l'impasto sulla spianatoia e impastarlo per un minuto in modo da far uscire l'aria inglobata nel processo di lievitazione.
Dividere l'impasto a meta' e creare 2 dischi dello spessore di circa mezzo cm. Su ciascun disco procedere nel seguente modo: ricoprire con 1/4 del prosciutto metà disco e ripiegare su di essa l'altra metà schiacciando un pochino per far uscire l'aria. Ricoprire con il prosciutto rimasto e arrotolare ripiegando i bordi in modo da sigillare la pagnotta.
Dare una forma allungata e disporre su una teglia infarinata.
Coprire con un canovaccio pulito e lasciar lievitare per circa 1/2 ora.
Scaldare il forno a 200°C.
Prima di infornare, fare 5 o 6 tagli in diagonale sulle pagnotte, spennellare con un po' d'acqua e cospargere con farina gialla.
Cuocere per 25-30 minuti.

Mix together flour, parmesan, salt, pepper, yeast and oil adding gradually some warm water (250ml is just a suggestion, the quantity depends on the flour you are using)till you obtain a homogeneous and elastic dough. Put in a warm place to rise for an hour. You will see it doubling its volume.
Knead for a minute in order to let the air go out from the dough and divide it in two parts.
For each of these two parts go on in this way: obtain a disc 1/2 cm thick an put 1/4 of the ham on one half of it. Cover the ham with the other half pressing a little bit to remove the air. Cover with another 1/4 ham and roll pushing the ends of the roll inside it.
Give to the dough a long shape and put the two loaves spaced out on a baking tin sprinkled with flour. Cover and set aside for half an hour and switch the oven on at 200°C.
Just before putting in the oven make 5-6 cuts on the loaves, sprinkle with water and spread with corn flour.
Bake for 25-30 minutes.

Il risotto del mio papà - My daddy's risotto

Quando ero piccola qualche volta capitava che il mio babbo cucinasse qualche cosa e il suo "pezzo forte" era questo risotto. In realtà la ricetta arrivava dalla moglie del macellaio del paese, ma per me è sempre rimasto il risotto del mio papà.
E' un piatto un po' strano perche' risulta molto cremoso e alla morbidità del latte e alla delicatezza del prosciutto associa il sapore forte del peperone, ma devo dire che a me e al maritone piace proprio tanto.

When I was a child, sometimes our father cooked something for us and his "masterpiece" was this risotto.
He obtained the recipe by our village butcher's wife but, for me, this will always be my daddy's risotto.
It's a strange recipe because it's really creamy and associates milk smoothness and ham delicacy to the strong pepper taste, but I have to say that both me and my husband appreciate it very much.



Risotto con latte, prosciutto e peperone

Ingredienti per 2
  • 150g riso
  • 3/4 di peperone rosso
  • 70g di prosciutto
  • 1/2 bicchiere di latte
  • brodo
  • parmigiano
  • burro

Risotto with milk, ham and pepper

Ingredients for 2
  • 150g rice
  • 3/4 red pepper
  • 70g ham
  • 1/2 glass of milk
  • stock
  • parmesan cheese
  • butter



Sciogliere un po' di burro in una pentola e soffriggere per 5 minuti il peperone tagliato a pezzetti e il prosiutto tritato. Aggiungere il riso e farlo tostare per qualche minuto.
Ricoprire il tutto con il brodo e far cuocere a fuoco basso sino a quando il brodo si riduce. Al momento di aggiungere altro liquido per evitare che si bruci tutto, aggiungere il latte e continuare la cottura aggiungendo, se necessario, altro brodo.
Una volta cotto spegnere il fuoco e condire con un pezzettino di burro e un'abbondante spolverata di parmigiano grattuggiato.

Melt a small piece of butter in a pot and lightly fry for 5 minutes the pepper cut in small pieces and the minced ham.
Add the rice and toast it for a while then cover with stock and cook over a low fire. When it's time to add some liquid in order to avoid to overcook everything, add the milk and go on cooking adding, if necessary, some more stock.
Once cooked, switch off the fire and season with a small piece of butter and some grated parmesan cheese.

Contorno di lenticchie - lentils side dish

Finalmente è tornato il sole e con esso una gran voglia di primavera.
In effetti ho il balcone in grande spolvero con primule, ciclamini e tulipani che stanno spuntando e si iniziano a fare delle belle gite in bicicletta durante il week end.
Il problema è che in casa c'erano ancora un po' di cose "invernali" da smaltire tra cui un bel cotechino e una scatola di lenticchie che prontamente è stata cucinata e mangiata in piu' riprese come contorno o per condire la pasta insieme a un cucchiaio di ricotta.
Arrivederci inverno!!!

At the end the Sun has come and now I really want Spring with warmer temperatures.
My balcony is full of flowers such as primroses, cyclamens and growing tulips and during week end we have started to make some beautiful trips riding our bicycles.
In my kitchen closets there were still some "winter" ingredients and so I prepared a lentils side dish that we have used actually as a side and also to dress pasta together with a spoon of ricotta cheese.
Goodbye Winter!!!



Contorno di lenticchie

Ingredienti
  • 400g di lenticchie
  • 1 cipolla
  • 1 carota
  • 1 gambo di sedano
  • 200g di passata di pomodoro
  • sale
  • olio di oliva
  • 3 foglie di alloro

Lentils side dish

Ingredients
  • 400g lentils
  • 1 onion
  • 1 carrot
  • 1 branch of celery
  • 200g tomato sauce
  • salt
  • olive oil
  • 3 bay leaves


Tritare bene carota, cipolla e sedano e farli soffriggere per qualche minuto in un po' di olio d'oliva.
Aggiungere le lenticchie e mezzo cucchiaino di sale (o un dado). Mescolare bene e versare la passata di pomodoro.
Ricoprire di acqua e aggiungere le tre foglie di alloro.
Far cuocere per un'ora e mezza almeno a fuoco lento. Assaggiare ed eventualmente aggiustare di sale.


Mince carrot, onion and celery and lightly fry them for some minutes with some olive oil.
Add lentils and half a teaspoon of salt or a stock cube. Mix very well and add tomato sauce. Mix well again and then cover everything with water. Add the bay leaves and cook over low flame for an hour and a half at least.
Taste and if necessary add some salt.

Japanese style soufflé cheesecake


Qualche giorno fa siamo stati invitati a cena da un nostro caro amico e ho deciso di preparare un dolce un po' originale. Avevo trovato la ricetta molto tempo fa e avevo provato questa torta un paio di volte rimanendo piacevolmente sorpresa dalla delicatezza del sapore, ma mi ero completamente dimenticata del fatto che essendo una specie di soufflé, il suo aspetto non era mai stato, come dire, presentabile...
Anche questa volta l'aspetto ha lasciato molto a desiderare per cui sono ricorsa ad una ricopertura strategica di mandorle a scaglie e ad una "vestizione" non proprio impeccabile, ma il sapore era decisamente piacevole.

Some days ago we have been invited for dinner at one of our best friends place and I've decided to prepare an original dessert. I've found this recipe a lot of time ago and all the two times I've baked this cake I've been pleasently surprised by its delicate taste. Unfortunately I've completely forgot the fact that, being a kind of soufflé, the cake aspect has never been perfect so I had to disguise the cake covering it with almond flakes and "dressing" it in a funny way.


Japanese soufflé cheesecake

Ingredienti
  • 200g di philadelphia yo
  • 50ml di latte
  • 3 uova
  • 100g di zucchero
  • 30g di maizena
  • succo di un limone
  • 1/2 cucchiaino di lievito
  • marmellata di albicocche
  • scaglie di mandorla

Japanese soufflé cheesecake

Ingredients
  • 200g cream cheese
  • 50ml milk
  • 3 eggs
  • 100g sugar
  • 30g cornstarch
  • 1 lemon juice
  • 1/2 teaspoon baking powder
  • apricot jam
  • almond flakes


Mescolare il formaggio con il latte sino a scioglierlo completamente in una crema semiliquida e priva di grumi.
Aggiungere 50g di zucchero, i tuorli , la maizena, il succo di limone e il lievito. Mescolare bene sino ad avere una crema.
Montare a neve ferma gli albumi e aggiungere ad essi, in due o piu' riprese, gli altri 50g di zucchero.
Unire gli albumi zuccherati alla crema mescolando il più delicatamente possibile.
Foderare una teglia da 18cm con carta da forno. Riempire la tortiera con la crema e far cuocere in forno a bagno maria per 35-40 minuti ad una temperatura di 180°C.
Sformare quando ancora tiepida.
Scaldare un cucchiaio di marmellata di albicocche e spennellare la superficie della torta. Ricoprire con le scaglie di mandorla.

Mix cream cheese with milk until soft. Add half of the sugar, egg yolks, cornstarch, lemon juice and baking powder and mix well till creamy.
Whisk egg whites until they form stiff peaks and add the remaining 50g of sugar in two or more batches.
Add egg whites to the cream and mix as gently as possible.
Cover a 18cm cake pan with greaseproof paper and fill it with the cream. Bake at 180°C at bain-marie in the oven for about 35-40 minutes.
Take the cake out of the mould when it is still warm.
Melt a tablespoon of apricot jam heating it and spread it on the cake surface. Cover with almond flakes.

Zuppa di carote e miso - Carrot and miso soup


Lo scorso anno, per il mio compleanno, il maritone mi ha regalato questo fantastico libro.
Non è da molto che ho assaggiato per la prima volta la cucina giapponese, ma mi è subito piaciuta tantissimo per la freschezza degli ingredienti e anche per come i piatti sono presentati, che dire... anche l'occhio vuole la sua parte...
Finalmente sono riuscita a trovare un po' di ingredienti giapponesi anche dalle mie parti e quindi era troppo difficile resistere alla tentazione di cucinare qualche cosina gustosa presa dal libro di Harumi Kurihara.
Ehm, al posto del brodo granulare di pollo suggerito dal libro io ci ho messo quello vero perchè me ne era avanzato un po' e ho un po' cambiato le proporzioni ma la ricetta è davvero veloce e il risultato, soprattutto quando fa freddo come nelle ultime sere, è davvero confortante.
Pare che il libro non sia stato ancora tradotto in italiano, ma se vi capita di trovarlo beh, sfogliatelo e ditemi se non è fantastico...

Last year, for my birthday, my husband gave me as a present this wonderful book.
It has not passed a lot of time since I first tasted Japanese kitchen, but I liked it from the very first moment because of the freshness of the ingredients and, why not, for the presentation of dishes.
Finally I managed to find some Japanese ingredients also in Milan-Pavia area and I couldn't resist from trying some recipes form Kurihara's book. I've used real stock instead of the granulated one suggested in the book because it was available in my kitchen and I've sligthly changed proportions, but this recipe is really fast and the result, especially during cold winter evenings, is really a comfort...


Zuppa di carote e miso

Ingredienti per 2
  • 1 carota
  • 2 tazze di brodo di pollo
  • 70g di pancetta a dadini
  • 1 cucchiaio di olio d'oliva
  • 2 cucchiai di sedano tritato
  • 1/2 cucchiaino di miso
  • prezzemolo o coriandolo
  • pepe

Carrot and miso soup

Ingredients for 2
  • 1 carrot
  • 2 cups chicken stock
  • 70g small cubes of bacon
  • 1 tablespoon olive oil
  • 2 tbs finely chopped celery
  • 1/2 teaspoon miso
  • parsley or coriander
  • pepper


Tagliare la carota a pezzetti di circa 2cm e farla cuocere nel brodo bollente usando la tecnica del "drop lid", cioè appoggiando un disco di carta da forno direttamente a contatto con il brodo in modo da avere un coperchio di carta a contatto con il brodo. Serve a distribuire in modo uniforme il calore durante la cottura.
In un padellino a parte, soffriggere la pancetta nell'olio e, una volta croccantina, aggiungere il sedano tritato finemente.
Una volta che le carote sono cotte, schiacciarle nel brodo rimasto, aggiungere sedano e pancetta e riportare il tutto a bollore.
Spegnere il fuoco, aggiungere il miso e farlo sciogliere. Condire con pepe e con prezzemolo tritato (in realtà sarebbe coriandolo, ma io non lo avevo...)

Cut the carrot in 1 inch thick pieces and cook it in the boiling stock using the drop lid technique. (put a lid of grease proof paper in direct contact with the stock to distribute in a uniform way the heat.
Light fry the bacon with olive oil and once it is crispy add the finely chopped celery.
Once carrots are cooked, mash them in the remaining stock and add bacon and celery. Bring to boil and turn the fire off. Add miso and let it melt in the soup. Season with pepper and parsley (or coriander, but I hadn't it...)

Pappardelle con sugo al pesto di pistacchio


Io adoro la Sicilia!
E' una regione fantastica ed una fonte inesauribile di idee culinarie. Quest'estate la mia mamma ci è andata in vacanza ed è ritornata con una discreta quantità di leccornie tra cui un vasetto di pesto di pistacchi.
Inutile dire che il vasetto è stato finito in pochissimo tempo e che a tutti noi è rimasto il ricordo di quella pasta come di una delle migliori mai mangiate.
Questa mattina ho deciso che era il caso di tentare di riprodurla per cui ecco qui il risultato dei miei sforzi. Direi che l'esperimento è riuscito!

I love Sicily!
It's a wonderful region and it's typical kitchen is really one of my preferred. Last summer my mother spent there some days and she came back with a lot of gorgeous things to eat. Among them there was a little pistachio pesto jar. We used it with pasta and sincerely it was one of the best pasta dishes I've ever eaten.
This morning I decided to try to recreate it in my kitchen and here ther's my experiment result. I dare say it was a successful experiment!



Sugo al pesto di pistacchi

Ingredienti
  • 70g di pistacchi
  • 3 cucchiai di olio evo
  • 2 cucchiai di parmigiano grattuggiato
  • 1 cucchiaino di sale
  • 3/4 di bicchiere di latte intero
  • 70g di dadini di prosciutto
  • 1/4 cipolla
  • 1 pezzettino di burro
  • pepe

Sauce with pistachio pesto

Ingredients
  • 70g pistachios
  • 3 tablespoons olive oil
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon salt
  • 3/4 whole milk glass
  • 70g small cubes of ham
  • 1/4 onion
  • 1 small piece of butter
  • pepper


Frullare i pistacchi con il sale, l'olio e il parmigiano.
Soffriggere la cipolla tritata nell'olio e aggiungere poi i dadini di prosciutto. Far saltare per qualche minuto e versare i pistacchi frullati e il latte. Aggiungere una spolveratina di pepe macinato e far cuocere per 5-7 minuti.
Condire la pasta con la salsa così ottenuta.

Whisk pistachios with salt, oil and parmesan cheese.
Lightly fry the minced onion and add ham little cubes. Cook for some minutes and add pistachios and milk. Sprinkle with ground pepper and cook for 5-7 minutes.
Use this sauce to season pasta.
