Baci di dama - Lady's kisses

Purtroppo per me, sono obbligata a restarmene chiusa in casa per un sacco di tempo per vari problemi di salute e la voglia di cucinare sta un po' svanendo.
Per tirarmi su il morale ho preparato i baci di dama. Sono in assoluto i miei biscotti preferiti, originari della città della mia nonna, Tortona. La ricetta originale prevede l'uso delle mandorle, ma io adoro la versione con le nocciole.
La ricetta che ho usato è quella di Comidademama.
Vi assicuro che il solo profumo che si spande per tutta la casa durante la cottura è eccezionale e i biscotti non sono da meno...

Unforunately I have some problems and I have to stay at home for a lot of time. My mood is really bad for this and my will to do experiments in the kitchen is diminishing.
To cheer me up I baked baci di dama. They are my favorite cookies and the original recipe comes from Tortona, my granny hometown. I think that they should be made with almands, but I absolutely adore the version with hazelnuts.

I assure that the scent in the air while baking them is fantastic and the cookies themselves are excellent too...



Baci di dama

Ingredienti per 25 baci
  • 100g nocciole
  • 100g zucchero
  • 100g burro morbido
  • 150g farina
  • 1 bustina vanillina
  • 50g cioccolato fondente

Lady's kisses

Ingredients for 25 baci
  • 100g hazelnutz
  • 100g sugar
  • 100g soft butter
  • 150g all purpose flour
  • vanillina
  • 50g dark chocolate



Tritare le nocciole inzieme allo zucchero in modo da ridurle in farina.
Aggiungere tutti gli altri ingredienti e impastare sino ad avere un composto omogeneo.
Mettere l'impasto in frigorifero avvolto nella pellicola e lasciarlo riposare per circa 30 minuti.
Formare delle palline piccole (in tutto se ne devono ottenere una cinquantina)il piu' possibile grandi uguali. Allinearle su una teglia rivestita di carta da forno e infornare a 170°C per 15 minuti.
Fondere il cioccolato e usarlo per unire due biscotti quando questi si sono ormai raffreddati e induriti.

Grind hazelnuts together with sugar in order to obtain a sort of hazelnuts flour. Add all the other ingredients and mix together till homogeneous.
Put the dough in fridge wrapped in a sheet of cling film and let to rest for 30 minutes.
Form little balls (roughly 50) all with the same size and line them on a oven safe tray covered with greaseproof paper.
Put in the oven at 170°C for 15 minutes.
Let the cookies cold and join two of them using melted chocolate.

Come svuotare il frigorifero: torta salata ai carciofi e pancetta

Vacanze in arrivo, casa da pulire e frigo da svuotare!
E' vero che il caldo di questi giorni poco invoglia ad accendere il forno, ma in casa mi rimaneva una confezione di pasta sfoglia e, approfittando della pulizia di frigorifero e freezer ho preparato questa facilissima e gustosa torta salata.

Holiday time is coming and so I have to prepare my home to holidays cleaning it and the fridge. With the high temperatures of these days the will of switch on the oven was really low but I still had a dough in my fridge so I cooked this fast and tasty quiche.

Quiche con carciofi e pancetta

Ingredienti
    250g carciofi surgelati
  • 70g pancetta a cubetti
  • 1 uovo
  • 70g formaggio tipo fontal
  • sale e pepe
  • 1 confezione di pasta sfoglia

Artichokes and bacon cake

Ingredients
  • 250g frozen artichokes
  • 70g bacon cubes
  • 1 egg
  • 70g cheese like fontal
  • salt and pepper
  • 1 ready puff pastry



Scongelare i carciofi cuocendoli per qualche minuto in acqua bollente, scolarli e tritarli finemente.
Tagliare il formaggio a cubetti e aggiungerlo ai carciofi con la pancetta, l'uovo, il sale e il pepe mescolando bene.
Disporre la pasta sfoflia sulla teglia bucherellando il fondo con una forchetta.
Riempire con il composto ed infornare a 180°C per circa 30 minuti.

Put the frozen artichokes in a pan with boiling water for some minutes.
Strain and chop them in small pieces.
Cut the cheese in dice and add them to artichokes, bacon, egg, salt and pepper mixing everything very well.
Put the puff pasty in a cake mould an make some little holes in the bottom with a fork.Fill with the artichokes mixture and put in the oven at 180°C for roughly 30 minutes.

Pancakes agli spinaci - spinach pancakes

Pancakes!
Il primo che ho mangiato era un "giant pancake" dolce con sciroppo d'acero e di cocco.
Ero in viaggio di nozze e credo che sia stata una delle piu' belle colazioni della mia vita, accarezzata dalla brezza marina mentre sorseggiavo il mio succo di guava sotto il portico dell'albergo di Lahaina guardando l'immenso baniano dell'isola.
Era buonissimo, ma talmente grosso che non sono proprio riuscita a finirlo.
Pero', da quel mattino, e' scoccata la scintilla tra me e i pancakes e ogni tanto ne sento la nostalgia.
Questa volta ho provato a non limitarmi alla colazione e a cucinarne uno salato che e' andato a popolare la bento box del maritone.
Sono partita dalla ricetta base dei pancakes di Annalisa Barbagli che spopolano nella blogosfera e l'ho modificata aggiungendo alcuni ingredienti e togliendo lo zucchero.
Il tutto, accompagnato da una spalmata di senape, ci e' piaciuto davvero tanto.

Pancakes!
The first pancake I ate was a giant one served with maple and coconut syrups.
It was during my honeymoon leave and I think It has been one of the most beautiful breakfasts I had in my life with the ocean breeze caressing me while I was drinking my guava juice looking at the huge banyan tree of the island.
That pancake was really good , but it was so big that I couldn't finish it.
On the other hand it made me fall in love with pancakes and sometimes I have a sort of nostalgy for them.
This time I've tried to cook a salted one.
I've modified the very popular recipe of Annalisa Barbagli adding some ingredients and removing sugar.
We've liked them very much eating them with some mustard sauce.



Pancakes agli spinaci

Ingredienti
  • 100g spinaci bolliti
  • 200g latte
  • 120g farina
  • 1 uovo
  • 30g burro
  • 8g lievito per dolci
  • 1/2 cucchiaino di sale
  • 1 punta di bicarbonato
  • pepe e noce moscata

Spinach pancakes

Ingredients
  • 100g boiled spinaches
  • 200g milk
  • 120g flour
  • 1 egg
  • 30g butter
  • 8g baking powder
  • 1/2 teaspoon salt
  • a pinch of baking soda
  • pepper and nutmeg



Bollire gli spinaci (freschi o surgelati) e strizzarli per bene. Tritarli piuttosto finemente e tenerli da parte.
Mischiare farina, lievito, bicarbonato, sale, pepe e noce moscata in modo da sciogliere tutti i grumi eventuali di farina e lievito. Aggiungere l'uovo, il latte e il burro fuso continuando a mescolare con una frusta sino ad ottenere un composto liscio e omogeneo. Per ultimo aggiungere gli spinaci e mescolare sempre bene con la frusta.
Scaldare una padellina antiaderente. Io l'ho prima unta leggermente con dell'olio di semi che ho poi rimosso in parte con un foglio di carta da cucina. Non credo sia necessario, ma non volevo che i pancakes si attaccassero in cottura.
Una volta che la padella e' ben calda, tenere il fuoco basso e versare al centro un paio di cucchiai di impasto. Si allargheranno da soli formando il pancake. Quando sulla superficie compariranno tanti buchini girare il pancake e dorarlo anche dall'altro lato.
Proseguire sino a terminare l'impasto.

Boil the spinaches and squeeze them. Finely mince them and put aside.
Mix flour, baking powder, baking soda, salt, pepper and nutmeg making all the lumps disappear.
Add the egg, milk and melted butter and mix well with an egg whisk till obtaining a very smooth and homogeneous mixture.
Add the spinaches and mix well.
Put a small nonstick pan on the fire and hot it well, then low the fire to the minimum and put a couple of spoon of the mixture in the center of the pan. The mixture will widen and form the pancake. When a lot of small holes appear on the surface turn the pancake to cook the other side.
Keep on cooking till finishing the mixture.

Muffins ai mirtilli - Blueberry muffins

Approfittando della giornata fresca e della spesa fatta al mercato, sabato mi sono lanciata su un classico della cucina americana: il muffin ai mirtilli.
La scoperta di questa estate e' stata infatti una bancarella del locale farmer's market che vende queste bacche ad un prezzo ragionevole, e quindi non potevo proprio esimermi dal comprarle.
Per la ricetta invece mi sono affidata ad un libricino che mi avevano regalato tempo fa sui dolcetti americani. Erano proposte ben due varianti di blueberry muffin e io ho cucinato quella piu' leggera anche se credo provero' l'altra a breve perche' il risultato era buono ma non molto simile al muffin che mi ero gustata in California qualche anno fa...

Exploiting the cool day and the shopping done at the local farmer's market, last Saturday I've baked a classic of American kitchen: blueberry muffins.
The most relevant discovery of this Summer is a fruit stand that sells these berries at a resonable price (in Italy all berries seem to be really expensive) so that I couldn't help to buy them.
I've taken this recipe from a little book on American sweets and cakes that has been given to me and I've found two different recipes for blueberry muffins. I've baked the lightest one but I think I'll try also the other one since the result was good but not similar to the wonderful blueberry muffin I've eaten in California some years ago...



Muffin ai mirtilli

Ingredienti
  • 250g di farina
  • 30g di zucchero
  • 8g di lievito
  • 125ml di latte
  • 100g di mirtilli
  • 35ml olive oil
  • 1 uovo

Blueberry muffins

Ingredients
  • 250g all purpose flour
  • 30g sugar
  • 8g baking powder
  • 125ml milk
  • 100g blueberries
  • 35ml olive oil
  • 1 egg



Mescolare tutti gli ingredienti secchi tra loro.
Mescolare latte uovo e olio.
Unire i due composti e mescolare sino a quando si ottiene un impasto omogeneo.
Versare l'impasto nella teglia e cuocere per 25 minuti circa in forno caldo a 180°C.

Mix togheter all dry ingredients including blueberries.
Mix milk, egg and oil and then put together the two categories of ingredients keeping on mixing till homogeneous.
Put in the muffin pan and bake for roughly 25 minutes in the oven preheated at 180°C.

Bavarese alle pesche - Peaches bavarese

Una delle cose che mi piace di piu' dell'estate e' la frutta.
Al supermercato e sulle bancarelle ci sono pesche, albicocche, ciliegie, prugne, fragole, lamponi, meloni, angurie e chi piu' ne ha piu' ne metta.
La varieta' dei colori e dei profumi e' eccezionale e solo questo basta a rubarmi un sorrisone anche quando la giornata di lavoro alle spalle e' stata un po' pesante.
Personalmente, ho un debole per le pesche.
La mia nonna ne aveva un albero nell'orto e, anche se era piuttosto malandato, ci regalava dei frutti formidabili che mangiavamo tagliati a fette cosparse di zucchero per noi bambini e immerse in un buon bicchiere di vino rosso per i "grandi".
Ora che grande sono diventata anch'io posso fare esperimenti culinari con questi frutti prelibati ed ecco qui il risultato di uno dei tanti.
La stessa ricetta puo' essere utilizzata sostituendo le pesche con altra frutta.

One of the things I like more of Summer are fruits.
At the supermarket or at the farmers markets you can find peaches, apricots, cherries,plums, strawberries, raspberries, melons, watermelons and so on.
The colors and scents are so variables and riches that these are enough to make me smile even if the working day I left over my shoulders has been really hard.
Personally I love peaches.
My grandmother had a peach tree in her courtyard and, even it was really in a bad way, gave us wonderful fruits that we ate cut in slices sprinkled with sugar for the children and dipped into red wine for the adults.
Now that I'm adult myself I can use peaches in kitchen experiments and here's a result of them.
The same recipe can be used replacing peaches with other fruits.



Bavarese alle pesche

Ingredienti
  • 150g di pesche
  • 170g di latte
  • 130g di zucchero
  • 3 tuorli d'uovo
  • 200ml di panna fresca
  • 7g di gelatina in fogli

Peaches bavarese

Ingredients
  • 150g peaches
  • 170g milk
  • 130g caster sugar
  • 3 egg yolks
  • 200ml fresh cream
  • 7g gelatine



Pelare e tagliare le pesche. Frullarle e tenerle da parte.
Scaldare il latte sino a farlo quasi bollire e, nel frattempo, ammorbidire la gelatina in acqua fredda.
In una terrina mescolare i tuorli con lo zucchero sino ad ottenere un composto chiaro e spumoso. Aggiungere il latte caldo e mescolare finchè non si ottiene una crema liscia e omogenea.
Strizzare bene la gelatina e aggiungerla alla crema continuando a mescolare sino al suo completo scioglimento. Far intiepidire la crema e montare la panna. Aggiungere alla crema, ormai fredda, le pesche frullate. Mescolare bene e incorporare la panna continuando a mescolare sino ad avere un composto uniforme.
Versare nello stampo e mettere in frigorifero per qualche ora. Io lo preparo sempre il giorno prima cosi' sono sicura che, in una notte, si solidifichi per bene.

Peel, cut and whisk the peaches. Set aside for a while.
Warm up the milk till it's almost boiling and, in the meantime, soften the gelatine in cold water.
Mix egg yolks and sugar till white and similar to a mousse. Add to the eggs hot milk and continue to mix till obtain a smooth cream. Squeeze the gelatine and add it to the cream keeping on mixing till completely melted. Make the mix cold and whip the cream.
Once cold add peaches and whipped cream mixing well till the cream is uniform.
Pour in a mold and put in the fridge for some hours. To be sure that the bavarese will be solid I prepare it in the evening and let it in the fridge for the whole night.

Pasta con zucchine, zafferano e prosciutto

La settimana scorsa non ho saputo resistere ad un'imperdibile offerta e, al "farmer's market", ho comperato un bel po' di ottime zucchine.
Il problema è che ho mangiato zucchine per tutta la settimana sotto svariate forme, e devo dire, ahimè, che la zucchina non è proprio l'ortaggio preferito di casa...
Me ne rimaneva una zitta zitta (per fortuna) nascosta in mezzo ai pomodori. Ecco, dato che oggi si doveva pure lavorare e il tempo era piuttosto poco, la zucchina è caduta a proposito per fare un sughetto leggero, gustoso e velocissimo!

Last week there was a very good offer at the local farmer's market and I really could not resist so I bought a lot of zucchini I've cooked in many different ways during last days. In reality I dare say that, even if zucchini are not the favorite vegetables of the family, we have eaten zucchini almost all the days...
Today there was only one of them in the fridge, concealed by tomatoes and, since we had no time because of work, it has been really useful to cook this light, tasty and really fast pasta dressing.



Pasta con zucchine, zafferano e prosciutto

Ingredienti per 2 persone
  • 160g di pasta
  • 1 zucchina
  • 1/4 di cipolla
  • 1 cucchiaio di olio d'oliva
  • 3 fette di prosciutto cotto
  • zafferano
  • sale e pepe

Pasta with zucchini, some saffron and ham

Ingredients for 2 persons
  • 160g pasta
  • 1 zucchini
  • 1/4 of onion
  • 1 spoon of olive oil
  • 3 thin ham slices
  • saffron
  • salt and pepper


Cuocere la pasta in abbondante acqua salata. Nel frattempo tritare la cipolla finemente, tagliare la zucchina a fettine sottili e tritare il prosciutto alla bell' e meglio. Far soffriggere la cipolla nell'olio e, una volta appassita, aggiungere la zucchina. Cuocere con il coperchio per almeno cinque minuti dopo di che aggiungere il prosciutto, lo zafferano e sale e pepe a piacere. Mescolare e proseguire la cottura per altri cinque minuti.
Scolare la pasta e condire con il sughetto.

Boil pasta in hot and salted water. In the meantime, finely chop the onion, mince the ham and cut the zucchini in thin slices. Lightly fry the onion and then add zucchini slices. Cook covering with a lid for at least five minutes. Add ham, some saffron (decide the quantity according to your taste), salt and pepper. Mix everything and cook for other five minutes. Use the zucchini mixture to season pasta.

zucchine ripiene - stuffed zucchini

Wow, l'estate sembra essere arrivata per davvero! E' da due giorni che si superano i 30°C e la voglia di mare e di vacanze è aumentata a dismisura. Beh, devo ancora aspettare almeno un mesetto per le vacanze.
Con questo caldo la voglia di accendere il forno non era molta, ma avevo tre belle zucchine in frigorifero e non sapevo proprio cosa farci per cui ecco che ho acceso il forno e sono scappata via dalla cucina per non soffrire il caldo :)

Wow, Summer seems to be definitely arrived! Today and yesterday temperature passed 30°C and the thought of sea and holidays is torturing me since I've to wait at least for a month before going away...
This hot weather is not inviting to use the oven, but I had three beautiful zucchini in the fridge and non ideas on how to use them...



Zucchine ripiene

Ingredienti
  • 3 zucchine medie
  • 70g di carne trita
  • timo fresco o in polvere
  • 1 cucchiaio di pan grattato
  • 2 cucchiai di latte
  • parmigiano grattuggiato
  • 1/4 di cipolla
  • sale e pepe

Stuffed zucchini

Ingredients
  • 3 medium zucchini
  • 70g minced meat
  • fresh or powdered thyme
  • 1 spoon of bread crumbs
  • 2 spoons of milk
  • grated parmesan
  • 1/4 onion
  • salt and pepper



Far scottare le zucchine in acqua bollente e salata per sette minuti. Scolarle e tagliarle per il lungo. Con un cucchiaino, scavarne la parte centrale e tenere da parte la polpa estratta.
Tritare la cipolla e farla soffriggere con il timo fresco e con la carne usando un po' di olio di oliva. Aggiungere la carne trita e la polpa estratta dalle zucchine e far cuocere per cinque minuti.
Bagnare con il latte il pane grattuggiato in modo che questo assorba tutto il liquido.
In una ciotola mischiare pane e carne e mescolare bene aggiungendo una generosa manciata di parmigiano grattuggiato e aggiustando con sale e pepe.
Riempire la parte scavata delle zucchine e cospargere con un po' di olio.
Cuocere in forno a 180°C sino a quando sul ripieno si formerà una leggera crosticina.

Boil zucchini for seven minutes in salted water, then cut them for the long side and, using a tea spoon, remove the central part holding by the extracted pulp.
Mince the onion and light fry it with the thyme (the quantity is at you choice), the meat and the pulp of zucchini. Cook for about five minutes.
Soak bread crumbs with milk and after it has absorbed all the liquid mix it with the cooked meat, a bunch of grated parmesan cheese, salt and pepper.
Fill the zucchini with this mixture and sprinkle with olive oil.
Cook in the oven at 180°C until crusty.
