Pasta fresca - Fresh pasta

Caspita, è veramente un periodo frenetico! Tra il lavoro, la primavera che invita ad uscire, le preoccupazioni per il terremoto in Abruzzo e per gli amici che là vivono e la Pasqua, ho trascurato il blog-ricettario.
Insomma, qui si continua a spignattare, ma non ci sono foto nè ricette scritte.
E in mezzo a tutta questa frenesia l'unica cosa che ho fatto bene e con calma è stata la pasta all'uovo.
Che bello ricordarsi della mia nonna che la faceva e di quanto sembrasse una festa veder uscire ravioli, tagliatelle e "taiarin" dalle sue mani e dalla mitica macchinetta stendipasta Imperia che, secondo un mio amico modenese, si chiama anche nonna papera...

This is a really frantic period: work, Spring that invites to go out to enjoy the warm April sun, concerns about Abruzzo earthquake and friends who live there, Easter... All these things made me abandon my blog-recipes collection.
At the end here we are carrying on cooking but I have no photos nor written recipes.
In all this frantic turmoil the only thing I've properly done is pasta all'uovo.
How beautiful is to remember my granny cooking it. Everything seemed to be happy when she produced ravioli, tagliatelle and spaghetti...



Pasta all'uovo

Ingredienti
  • 350g di farina 00
  • 150g di farina 0
  • 4 uova
  • 5g di sale

Fresh pasta

Ingredients
  • 350g all purpose flour
  • 150g whole durum flour
  • 4 eggs
  • 5g salt



Mettere tutti gli ingredienti secchi sulla spianatoia, fare la classica fontana e mettere al centro le 4 uova leggermente sbattute.
Impastare vigorosamente sino ad ottenere un composto omogeneo e umido. Se necessario aggiungere un pochino di acqua.
Dividere l'impasto in quattro parti e avvolgere ciasquna nella pellicola. Lasciar riposare per circa mezz'ora e iniziare a stendere la pasta.
Io ho usato l'Imperia della nonna, ma con tanta pazienza si può tirare la pasta anche con il mattarello.
Una volta raggiunto lo spessore desiderato tagliare la pasta e, se non la si consuma subito, lasciar seccare.
Questa pasta cuoce davvero in pochissimo tempo,

Put all the dry ingredients where you plan to knead, make a hole in the middle and put there the lightly beated eggs. Knead vigorously till obtain a wet and homogeneous ball. Cut it in four parts and wrap each of them in a piece of cling film. Put to rest for nearly half an hour and then start to spread out the pasta.
I've used the dedicated machine but it can be done also with the rolling pin.
Once you have reached the desired thickness cut the pasta and, if you don't cook it immediately let it dry.
This pasta should be boiled for few minutes.
