Risotto ubriaco - Red wine risotto

Essere incinte, da un punto di vista gastronomico, pone un sacco di limitazioni.
L'altra sera abbiamo avuto un ospite a cena ed è avanzato un po' di vino rosso, cosa che normalmente non succede dato che a me un buon vinello piace parecchio. Purtroppo pero' ho eliminato il vino dalla mia dieta e quindi l'ho utilizzato per cucinare un buon risotto in modo da far evaporare completamente l'alcool.

Being pregnant gives a lot of limits about what you can eat or drink. Yesterday evening we had a friend at our place for dinner and since I could not drink it we left a glass of red wine remaining in the bottle. To finish it I've used it to cook a good risotto so that all the alchool could evaporate during cooking time.


Risotto ubriaco

Ingredienti per 2 persone
  • 150g di riso
  • 1/4 di cipolla
  • 70g di pasta di salame
  • 1 bicchiere di vino rosso
  • 2 rametti di rosmarino
  • brodo vegetale
  • burro
  • parmigiano

Red wine risotto

Ingredients for 2 persons
  • 150g rice
  • 1/4 onion
  • 70g sausage
  • 1 glass of red wine
  • 2 rosmary sprigs
  • clear broth
  • butter
  • parmesan cheese



Tritare finemente cipolla e rosmarino e farli soffriggere in poco burro. Aggiungere la pasta di salame e farla rosolare per bene. Aggiungere il riso e farlo tostare per qualche minuto. Annaffiare con il vino rosso e far evaporare l'alcool.
Aggiungere il brodo e mescolare di tanto in tanto sino a cottura ultimata.
Spegnere il fuoco e mantecare con un pezzetto di burro. Aggiungere il grana grattuggiato.

Finely mince onion and rosmary an lighly fry them in the melted butter. Add sausage in small pieces an cook it for a while. Add the rice and make it toast. Pour the red wine and let the alcohol evaporate. Add some broth an cook slowly since ready. Add some butter and grated parmesan cheese and eat.

Ricotta pancakes


L'autunno è arrivato e, benchè non faccia ancora freddo, il cielo è tutto grigio e c'è quella fastidiosa nebbiolina che fa venire voglia di infilarsi sotto una coperta a sonnecchiare o a leggere un buon libro. E' tempo di cibi coccolosi che sappiano avvolgere con la loro morbidezza e che facciano sentire un po' meno la nostalgia del sole.
Un cibo che su di me ha davvero un effetto "consolatorio" è il pancake alla ricotta con il miele colato sopra e quale momento migliore per prepararlo se non una nebbiosa domenica mattina?

Fall is definitely here and, even if the weather is not so cold, the sky over Pavia is gray and a light fog is everywhere, especially in the morning. I would really like to stay under a blanket to take a nap or to read a good book. It's time for smooth comfort foods to reduce Sun nostalgia.
For me, one of these comfort foods is ricotta pancake with honey over it. I prepared these "little suns" on a foggy Sunday morning.



Pancakes alla ricotta

Ingredienti per 10 pancakes
  • 50g di farina "00"
  • 165g di ricotta
  • 1 uovo
  • 1 pizzico di sale
  • 80ml di latte
  • 1 cucchiaino di lievito per dolci
  • 1 cucchiaio di zucchero

Ricotta pancakes

Ingredients for 10 pancakes
  • 50g all purpose flour
  • 165g ricotta cheese
  • 1 egg
  • 1 pinch of salt
  • 80ml milk
  • 1 teaspoon yeast
  • 1 tablespoon sugar



In una ciotola mescolare la ricotta con il tuorlo dell'uovo e lo zucchero. Aggiungere il latte, la farina, il lievito e il sale . Montare a neve ferma l'albume e aggiungerlo al composto mescolando in modo da renderlo liscio e uniforme.
Scaldare una padella antiaderente e, a fuoco basso, cuocere un cucchiaio abbondante di composto. Il fuoco va mantenuto piuttosto basso per evitare di bruciare i pancakes che vanno cotti per circa un minuto e mezzo per lato. Servire caldi accompagnandoli con miele, marmellata, sciroppo d'acero o frutta fresca a piacere.

In a bowl mix together ricotta cheese, egg yolk and sugar. Add milk, flour, yeast and salt. Whip the egg white until stiff peaks form and add it to the cream keeping on mixing till smooth and homogeneous.
Heat a non stick pan and cook a big tablespoon of the pancake mixture being careful to keep the fire low in order not to burn it. It will take roughly one minute and a half for each side. Serve hot with honey, jam, maple syrup or fresh fruits according to your taste.

Pizza!


In questo periodo c'è una cosa che non mi stanco mai di mangiare: la pizza!
Una delle mie versioni preferite è sicuramente quella con le verdure grigliate, ma, siccome ora non ci sono molte verdure di stagione che mi piacciono sulla pizza, ho deciso di imparare a cucinarla a casa in una variante piu' semplice: la pizza al prosciutto.
Certo, potendo scegliere, io aggiungerei anche un pochino di gorgonzola, ma ahimè, per almeno altri cinque mesi per me il gorgonzola è off limits :(
Devo dire che tra tutti i tentativi di cucinare una pizza decente questo e' stato quello piu' riuscito e, per essere stata cotta in un forno elettrico domestico senza alcun tipo di pietra refrattaria, non era per niente male.

In this period I'd always eat pizza!
My favorite version is the one with a topping of grilled vegetables but, since in this season there are not so many vegetables I like on pizza, I've decided to try to cook at home an easier pizza version, the one with ham.
I would suggest to put some gorgonzola or blue cheese on it together with ham, but unfortunately I cannot eat this kind of cheeses for next five months at least.
I have to say that the result of this cooking experiment has been really good considered that my oven is an electric one and that I have not a stone



Pizza al prosciutto

Ingredienti per 2 pizze
  • 400g di farina "00"
  • 20g lievito di birra
  • 150 ml di acqua
  • 2 cucchiaini di sale
  • 2 cucchiai di olio di oliva
  • 1 cucchiaino di zucchero
  • 120g passata di pomodoro
  • 2 mozzarelle
  • prosciutto a piacere

Pizza with ham

Ingredients for 2 pizzas
  • 400g all purpose flour
  • 20g brewer's yeast
  • 150ml water
  • 2 teaspoon salt
  • 2 tablespoon olive oil
  • 1 teaspoon sugar
  • 120g passata
  • 2 mozzarella
  • as much ham as you like



Sciogliere il lievito di birra in un po' di acqua e impastarlo insieme a farina, sale, zucchero e olio. Aggiungere la restante acqua poco alla volta regolandosi in modo da ottenere un impasto umido, ma liscio e piuttosto compatto. Far lievitare l'impasto per un'ora e mezza mettendolo in una ciotola unta di olio e ricoperta da una pellicola.
Passato questo tempo, dividere l'impasto in due parti uguali e stendere entrambe con il mattarello in modo da ottenere uno spessore di circa tre millimetri.
Mettere la pasta sulle apposite teglie e cospargerla con la passata di pomodoro, la mozzarella tagliata a cubetti e il prosciutto sfilettato. Cuocere in forno a 200-250°C sino a cottura ultimata.

Make the brewer's yeast melt in a few water. Knead flour, sugar, salt, oil and melted yeast all together adding the other water a few at a time till you obtain a wet compound which is also smooth and compact.
Put the dough in a oiled bowl covered with cling film to rise for a hour and a half.
Divide the dough in two equal parts and spread them with a rolling pin till they are 3mm thick.
Put the dough in two baking pan and spread passata over them. Add mozzarella cut into dice and ham. Bake in the oven at 200°-250°C till ready.

Pollo e peperoni - Chicken and peppers

A volte mi capita di avere davvero poco tempo per cucinare e allora ricorro ad alcuni piatti super veloci, ma comunque saporiti.
Il pollo con i peperoni fatto in questo modo ricade nella mia categoria di ricette salva pranzo /cena. Non lo faccio spesso, ma tutte le volte non mi delude!

Sometimes it happens that I have not a lot of time to cook and so I prepare some very fast dishes without giving up to taste. Chicken with peppers cooked in this way is one of my favorite fast dishes.


Pollo e peperoni

Ingredienti per 2 persone
  • 3 filetti di pollo
  • 1 peperone rosso
  • 4 acciughe sott'olio
  • 1 cucchiaio di olio d'oliva
  • pepe nero
  • prezzemolo

Chicken with peppers

Ingredients for 2 persons
  • 3 chicken fillets
  • 1 red pepper
  • 4 anchovies in oil
  • 1 tablespoon olive oil
  • black pepper
  • parsley



Tagliare il peperone e il pollo a striscioline sottili. Scaldare un cucchiaio di olio d'oliva in una padella antiaderente e far rosolare i peperoni per almeno 5 minuti. Quando si saranno ammorbiditi aggiungere il pollo. Proseguire la cottura in modo che il pollo cuocia da tutti i lati. Aggiungere le acciughe e cuocere sino a quando non si sono sciolte completamente. Spolverare con una grattata di pepe nero e un po' di prezzemolo tritato.

Cut both the chicken ant the pepper into small stripes. In a non-sticking pan, preheat a tablespoon of olive oil and light fry the pepper's stripes. When they are softened add the chicken and cook until it is sautè on all its sides. Add then the anchovies and cook till they are completely melted. Add some grounded black pepper and some minced parsley.

Risotto con la zucca - Pumpkin risotto

E anche l'autunno è arrivato!
Sinceramente è una stagione che mi piace moltissimo. Dopo il caldo soffocante arriva un pochino di fresco a rivitalizzare le mattine e gli alberi si colorano di sfumature impareggiabili. E poi si ricomincia a cucinare senza aver paura di morire di caldo per aver acceso il forno.
E cosa richiama immediatamente l'autunno? Ma la zucca, no?
La scorsa settimana al farmer's market abbiamo visto le prime belle zucche e ne abbiamo fatto scorta. La prima cosa cucinata è stata un bel risotto, da buona lomellina...

And now Fall is here!
I really like this season. It arrives with some fresh air after the terrible Summer hot weather and it gives some relief coloring the leaves with wonderful shades. And now we can also cook and bake without fearing high temperatures!
What is typical of Fall? Pumpkins off course!
Last week we bought a wonderful one at the local farmer's market and we decided to use a piece of it to make some risotto.



Risotto con la zucca

Ingredienti per 3 persone
  • 300g zucca
  • 240g riso carnaroli
  • 1/2 cipolla
  • 1 bicchiere di vino bianco
  • burro
  • brodo
  • parmigiano grattuggiato

Pumpkin risotto

Ingredients for 3 persons
  • 300g pumpkin
  • 240g carnaroli rice
  • 1/2 onion
  • a glass of white vine
  • butter
  • stock
  • grated parmesan cheese



Tritare finemente la cipolla e tagliare la zucca, pulita dei semi e dei filamenti, in cubetti piuttosto piccoli. Far sciogliere una noce di burro nella pentola e soffriggere la cipolla. Quando questa sarà morbida aggiungere la zucca e far rosolare per almeno cinque minuti.
Aggiungere il riso e farlo tostare. Sfumare con il vino bianco e aggiungere il brodo.
Far cuocere per una ventina di minuti a fuoco lento aggiungendo, se necessario, del brodo caldo. Mantecare con un pezzetto di burro e del parmigiano grattuggiato.

Finely chop the onion and cut the pumpkin in very small dice. Melt a tablespoon of butter in the pot ant ligh fry the onion. When it is soft, add the punpkin and cook for ay least five minutes. Add the rice and toast it. Pour the white wine and let it evaporate. Add the stock and boil on a low fire for about twnty minutes adding, if necessary, some more stock. Switch off the fire and make a tablespoon of butter melt in the cooked rice. Put in it some grated parmesan cheese and serve.

Baci di dama - Lady's kisses

Purtroppo per me, sono obbligata a restarmene chiusa in casa per un sacco di tempo per vari problemi di salute e la voglia di cucinare sta un po' svanendo.
Per tirarmi su il morale ho preparato i baci di dama. Sono in assoluto i miei biscotti preferiti, originari della città della mia nonna, Tortona. La ricetta originale prevede l'uso delle mandorle, ma io adoro la versione con le nocciole.
La ricetta che ho usato è quella di Comidademama.
Vi assicuro che il solo profumo che si spande per tutta la casa durante la cottura è eccezionale e i biscotti non sono da meno...

Unforunately I have some problems and I have to stay at home for a lot of time. My mood is really bad for this and my will to do experiments in the kitchen is diminishing.
To cheer me up I baked baci di dama. They are my favorite cookies and the original recipe comes from Tortona, my granny hometown. I think that they should be made with almands, but I absolutely adore the version with hazelnuts.

I assure that the scent in the air while baking them is fantastic and the cookies themselves are excellent too...



Baci di dama

Ingredienti per 25 baci
  • 100g nocciole
  • 100g zucchero
  • 100g burro morbido
  • 150g farina
  • 1 bustina vanillina
  • 50g cioccolato fondente

Lady's kisses

Ingredients for 25 baci
  • 100g hazelnutz
  • 100g sugar
  • 100g soft butter
  • 150g all purpose flour
  • vanillina
  • 50g dark chocolate



Tritare le nocciole inzieme allo zucchero in modo da ridurle in farina.
Aggiungere tutti gli altri ingredienti e impastare sino ad avere un composto omogeneo.
Mettere l'impasto in frigorifero avvolto nella pellicola e lasciarlo riposare per circa 30 minuti.
Formare delle palline piccole (in tutto se ne devono ottenere una cinquantina)il piu' possibile grandi uguali. Allinearle su una teglia rivestita di carta da forno e infornare a 170°C per 15 minuti.
Fondere il cioccolato e usarlo per unire due biscotti quando questi si sono ormai raffreddati e induriti.

Grind hazelnuts together with sugar in order to obtain a sort of hazelnuts flour. Add all the other ingredients and mix together till homogeneous.
Put the dough in fridge wrapped in a sheet of cling film and let to rest for 30 minutes.
Form little balls (roughly 50) all with the same size and line them on a oven safe tray covered with greaseproof paper.
Put in the oven at 170°C for 15 minutes.
Let the cookies cold and join two of them using melted chocolate.

Come svuotare il frigorifero: torta salata ai carciofi e pancetta

Vacanze in arrivo, casa da pulire e frigo da svuotare!
E' vero che il caldo di questi giorni poco invoglia ad accendere il forno, ma in casa mi rimaneva una confezione di pasta sfoglia e, approfittando della pulizia di frigorifero e freezer ho preparato questa facilissima e gustosa torta salata.

Holiday time is coming and so I have to prepare my home to holidays cleaning it and the fridge. With the high temperatures of these days the will of switch on the oven was really low but I still had a dough in my fridge so I cooked this fast and tasty quiche.

Quiche con carciofi e pancetta

Ingredienti
    250g carciofi surgelati
  • 70g pancetta a cubetti
  • 1 uovo
  • 70g formaggio tipo fontal
  • sale e pepe
  • 1 confezione di pasta sfoglia

Artichokes and bacon cake

Ingredients
  • 250g frozen artichokes
  • 70g bacon cubes
  • 1 egg
  • 70g cheese like fontal
  • salt and pepper
  • 1 ready puff pastry



Scongelare i carciofi cuocendoli per qualche minuto in acqua bollente, scolarli e tritarli finemente.
Tagliare il formaggio a cubetti e aggiungerlo ai carciofi con la pancetta, l'uovo, il sale e il pepe mescolando bene.
Disporre la pasta sfoflia sulla teglia bucherellando il fondo con una forchetta.
Riempire con il composto ed infornare a 180°C per circa 30 minuti.

Put the frozen artichokes in a pan with boiling water for some minutes.
Strain and chop them in small pieces.
Cut the cheese in dice and add them to artichokes, bacon, egg, salt and pepper mixing everything very well.
Put the puff pasty in a cake mould an make some little holes in the bottom with a fork.Fill with the artichokes mixture and put in the oven at 180°C for roughly 30 minutes.

Pancakes agli spinaci - spinach pancakes

Pancakes!
Il primo che ho mangiato era un "giant pancake" dolce con sciroppo d'acero e di cocco.
Ero in viaggio di nozze e credo che sia stata una delle piu' belle colazioni della mia vita, accarezzata dalla brezza marina mentre sorseggiavo il mio succo di guava sotto il portico dell'albergo di Lahaina guardando l'immenso baniano dell'isola.
Era buonissimo, ma talmente grosso che non sono proprio riuscita a finirlo.
Pero', da quel mattino, e' scoccata la scintilla tra me e i pancakes e ogni tanto ne sento la nostalgia.
Questa volta ho provato a non limitarmi alla colazione e a cucinarne uno salato che e' andato a popolare la bento box del maritone.
Sono partita dalla ricetta base dei pancakes di Annalisa Barbagli che spopolano nella blogosfera e l'ho modificata aggiungendo alcuni ingredienti e togliendo lo zucchero.
Il tutto, accompagnato da una spalmata di senape, ci e' piaciuto davvero tanto.

Pancakes!
The first pancake I ate was a giant one served with maple and coconut syrups.
It was during my honeymoon leave and I think It has been one of the most beautiful breakfasts I had in my life with the ocean breeze caressing me while I was drinking my guava juice looking at the huge banyan tree of the island.
That pancake was really good , but it was so big that I couldn't finish it.
On the other hand it made me fall in love with pancakes and sometimes I have a sort of nostalgy for them.
This time I've tried to cook a salted one.
I've modified the very popular recipe of Annalisa Barbagli adding some ingredients and removing sugar.
We've liked them very much eating them with some mustard sauce.



Pancakes agli spinaci

Ingredienti
  • 100g spinaci bolliti
  • 200g latte
  • 120g farina
  • 1 uovo
  • 30g burro
  • 8g lievito per dolci
  • 1/2 cucchiaino di sale
  • 1 punta di bicarbonato
  • pepe e noce moscata

Spinach pancakes

Ingredients
  • 100g boiled spinaches
  • 200g milk
  • 120g flour
  • 1 egg
  • 30g butter
  • 8g baking powder
  • 1/2 teaspoon salt
  • a pinch of baking soda
  • pepper and nutmeg



Bollire gli spinaci (freschi o surgelati) e strizzarli per bene. Tritarli piuttosto finemente e tenerli da parte.
Mischiare farina, lievito, bicarbonato, sale, pepe e noce moscata in modo da sciogliere tutti i grumi eventuali di farina e lievito. Aggiungere l'uovo, il latte e il burro fuso continuando a mescolare con una frusta sino ad ottenere un composto liscio e omogeneo. Per ultimo aggiungere gli spinaci e mescolare sempre bene con la frusta.
Scaldare una padellina antiaderente. Io l'ho prima unta leggermente con dell'olio di semi che ho poi rimosso in parte con un foglio di carta da cucina. Non credo sia necessario, ma non volevo che i pancakes si attaccassero in cottura.
Una volta che la padella e' ben calda, tenere il fuoco basso e versare al centro un paio di cucchiai di impasto. Si allargheranno da soli formando il pancake. Quando sulla superficie compariranno tanti buchini girare il pancake e dorarlo anche dall'altro lato.
Proseguire sino a terminare l'impasto.

Boil the spinaches and squeeze them. Finely mince them and put aside.
Mix flour, baking powder, baking soda, salt, pepper and nutmeg making all the lumps disappear.
Add the egg, milk and melted butter and mix well with an egg whisk till obtaining a very smooth and homogeneous mixture.
Add the spinaches and mix well.
Put a small nonstick pan on the fire and hot it well, then low the fire to the minimum and put a couple of spoon of the mixture in the center of the pan. The mixture will widen and form the pancake. When a lot of small holes appear on the surface turn the pancake to cook the other side.
Keep on cooking till finishing the mixture.

Muffins ai mirtilli - Blueberry muffins

Approfittando della giornata fresca e della spesa fatta al mercato, sabato mi sono lanciata su un classico della cucina americana: il muffin ai mirtilli.
La scoperta di questa estate e' stata infatti una bancarella del locale farmer's market che vende queste bacche ad un prezzo ragionevole, e quindi non potevo proprio esimermi dal comprarle.
Per la ricetta invece mi sono affidata ad un libricino che mi avevano regalato tempo fa sui dolcetti americani. Erano proposte ben due varianti di blueberry muffin e io ho cucinato quella piu' leggera anche se credo provero' l'altra a breve perche' il risultato era buono ma non molto simile al muffin che mi ero gustata in California qualche anno fa...

Exploiting the cool day and the shopping done at the local farmer's market, last Saturday I've baked a classic of American kitchen: blueberry muffins.
The most relevant discovery of this Summer is a fruit stand that sells these berries at a resonable price (in Italy all berries seem to be really expensive) so that I couldn't help to buy them.
I've taken this recipe from a little book on American sweets and cakes that has been given to me and I've found two different recipes for blueberry muffins. I've baked the lightest one but I think I'll try also the other one since the result was good but not similar to the wonderful blueberry muffin I've eaten in California some years ago...



Muffin ai mirtilli

Ingredienti
  • 250g di farina
  • 30g di zucchero
  • 8g di lievito
  • 125ml di latte
  • 100g di mirtilli
  • 35ml olive oil
  • 1 uovo

Blueberry muffins

Ingredients
  • 250g all purpose flour
  • 30g sugar
  • 8g baking powder
  • 125ml milk
  • 100g blueberries
  • 35ml olive oil
  • 1 egg



Mescolare tutti gli ingredienti secchi tra loro.
Mescolare latte uovo e olio.
Unire i due composti e mescolare sino a quando si ottiene un impasto omogeneo.
Versare l'impasto nella teglia e cuocere per 25 minuti circa in forno caldo a 180°C.

Mix togheter all dry ingredients including blueberries.
Mix milk, egg and oil and then put together the two categories of ingredients keeping on mixing till homogeneous.
Put in the muffin pan and bake for roughly 25 minutes in the oven preheated at 180°C.

Bavarese alle pesche - Peaches bavarese

Una delle cose che mi piace di piu' dell'estate e' la frutta.
Al supermercato e sulle bancarelle ci sono pesche, albicocche, ciliegie, prugne, fragole, lamponi, meloni, angurie e chi piu' ne ha piu' ne metta.
La varieta' dei colori e dei profumi e' eccezionale e solo questo basta a rubarmi un sorrisone anche quando la giornata di lavoro alle spalle e' stata un po' pesante.
Personalmente, ho un debole per le pesche.
La mia nonna ne aveva un albero nell'orto e, anche se era piuttosto malandato, ci regalava dei frutti formidabili che mangiavamo tagliati a fette cosparse di zucchero per noi bambini e immerse in un buon bicchiere di vino rosso per i "grandi".
Ora che grande sono diventata anch'io posso fare esperimenti culinari con questi frutti prelibati ed ecco qui il risultato di uno dei tanti.
La stessa ricetta puo' essere utilizzata sostituendo le pesche con altra frutta.

One of the things I like more of Summer are fruits.
At the supermarket or at the farmers markets you can find peaches, apricots, cherries,plums, strawberries, raspberries, melons, watermelons and so on.
The colors and scents are so variables and riches that these are enough to make me smile even if the working day I left over my shoulders has been really hard.
Personally I love peaches.
My grandmother had a peach tree in her courtyard and, even it was really in a bad way, gave us wonderful fruits that we ate cut in slices sprinkled with sugar for the children and dipped into red wine for the adults.
Now that I'm adult myself I can use peaches in kitchen experiments and here's a result of them.
The same recipe can be used replacing peaches with other fruits.



Bavarese alle pesche

Ingredienti
  • 150g di pesche
  • 170g di latte
  • 130g di zucchero
  • 3 tuorli d'uovo
  • 200ml di panna fresca
  • 7g di gelatina in fogli

Peaches bavarese

Ingredients
  • 150g peaches
  • 170g milk
  • 130g caster sugar
  • 3 egg yolks
  • 200ml fresh cream
  • 7g gelatine



Pelare e tagliare le pesche. Frullarle e tenerle da parte.
Scaldare il latte sino a farlo quasi bollire e, nel frattempo, ammorbidire la gelatina in acqua fredda.
In una terrina mescolare i tuorli con lo zucchero sino ad ottenere un composto chiaro e spumoso. Aggiungere il latte caldo e mescolare finchè non si ottiene una crema liscia e omogenea.
Strizzare bene la gelatina e aggiungerla alla crema continuando a mescolare sino al suo completo scioglimento. Far intiepidire la crema e montare la panna. Aggiungere alla crema, ormai fredda, le pesche frullate. Mescolare bene e incorporare la panna continuando a mescolare sino ad avere un composto uniforme.
Versare nello stampo e mettere in frigorifero per qualche ora. Io lo preparo sempre il giorno prima cosi' sono sicura che, in una notte, si solidifichi per bene.

Peel, cut and whisk the peaches. Set aside for a while.
Warm up the milk till it's almost boiling and, in the meantime, soften the gelatine in cold water.
Mix egg yolks and sugar till white and similar to a mousse. Add to the eggs hot milk and continue to mix till obtain a smooth cream. Squeeze the gelatine and add it to the cream keeping on mixing till completely melted. Make the mix cold and whip the cream.
Once cold add peaches and whipped cream mixing well till the cream is uniform.
Pour in a mold and put in the fridge for some hours. To be sure that the bavarese will be solid I prepare it in the evening and let it in the fridge for the whole night.

Pasta con zucchine, zafferano e prosciutto

La settimana scorsa non ho saputo resistere ad un'imperdibile offerta e, al "farmer's market", ho comperato un bel po' di ottime zucchine.
Il problema è che ho mangiato zucchine per tutta la settimana sotto svariate forme, e devo dire, ahimè, che la zucchina non è proprio l'ortaggio preferito di casa...
Me ne rimaneva una zitta zitta (per fortuna) nascosta in mezzo ai pomodori. Ecco, dato che oggi si doveva pure lavorare e il tempo era piuttosto poco, la zucchina è caduta a proposito per fare un sughetto leggero, gustoso e velocissimo!

Last week there was a very good offer at the local farmer's market and I really could not resist so I bought a lot of zucchini I've cooked in many different ways during last days. In reality I dare say that, even if zucchini are not the favorite vegetables of the family, we have eaten zucchini almost all the days...
Today there was only one of them in the fridge, concealed by tomatoes and, since we had no time because of work, it has been really useful to cook this light, tasty and really fast pasta dressing.



Pasta con zucchine, zafferano e prosciutto

Ingredienti per 2 persone
  • 160g di pasta
  • 1 zucchina
  • 1/4 di cipolla
  • 1 cucchiaio di olio d'oliva
  • 3 fette di prosciutto cotto
  • zafferano
  • sale e pepe

Pasta with zucchini, some saffron and ham

Ingredients for 2 persons
  • 160g pasta
  • 1 zucchini
  • 1/4 of onion
  • 1 spoon of olive oil
  • 3 thin ham slices
  • saffron
  • salt and pepper


Cuocere la pasta in abbondante acqua salata. Nel frattempo tritare la cipolla finemente, tagliare la zucchina a fettine sottili e tritare il prosciutto alla bell' e meglio. Far soffriggere la cipolla nell'olio e, una volta appassita, aggiungere la zucchina. Cuocere con il coperchio per almeno cinque minuti dopo di che aggiungere il prosciutto, lo zafferano e sale e pepe a piacere. Mescolare e proseguire la cottura per altri cinque minuti.
Scolare la pasta e condire con il sughetto.

Boil pasta in hot and salted water. In the meantime, finely chop the onion, mince the ham and cut the zucchini in thin slices. Lightly fry the onion and then add zucchini slices. Cook covering with a lid for at least five minutes. Add ham, some saffron (decide the quantity according to your taste), salt and pepper. Mix everything and cook for other five minutes. Use the zucchini mixture to season pasta.

zucchine ripiene - stuffed zucchini

Wow, l'estate sembra essere arrivata per davvero! E' da due giorni che si superano i 30°C e la voglia di mare e di vacanze è aumentata a dismisura. Beh, devo ancora aspettare almeno un mesetto per le vacanze.
Con questo caldo la voglia di accendere il forno non era molta, ma avevo tre belle zucchine in frigorifero e non sapevo proprio cosa farci per cui ecco che ho acceso il forno e sono scappata via dalla cucina per non soffrire il caldo :)

Wow, Summer seems to be definitely arrived! Today and yesterday temperature passed 30°C and the thought of sea and holidays is torturing me since I've to wait at least for a month before going away...
This hot weather is not inviting to use the oven, but I had three beautiful zucchini in the fridge and non ideas on how to use them...



Zucchine ripiene

Ingredienti
  • 3 zucchine medie
  • 70g di carne trita
  • timo fresco o in polvere
  • 1 cucchiaio di pan grattato
  • 2 cucchiai di latte
  • parmigiano grattuggiato
  • 1/4 di cipolla
  • sale e pepe

Stuffed zucchini

Ingredients
  • 3 medium zucchini
  • 70g minced meat
  • fresh or powdered thyme
  • 1 spoon of bread crumbs
  • 2 spoons of milk
  • grated parmesan
  • 1/4 onion
  • salt and pepper



Far scottare le zucchine in acqua bollente e salata per sette minuti. Scolarle e tagliarle per il lungo. Con un cucchiaino, scavarne la parte centrale e tenere da parte la polpa estratta.
Tritare la cipolla e farla soffriggere con il timo fresco e con la carne usando un po' di olio di oliva. Aggiungere la carne trita e la polpa estratta dalle zucchine e far cuocere per cinque minuti.
Bagnare con il latte il pane grattuggiato in modo che questo assorba tutto il liquido.
In una ciotola mischiare pane e carne e mescolare bene aggiungendo una generosa manciata di parmigiano grattuggiato e aggiustando con sale e pepe.
Riempire la parte scavata delle zucchine e cospargere con un po' di olio.
Cuocere in forno a 180°C sino a quando sul ripieno si formerà una leggera crosticina.

Boil zucchini for seven minutes in salted water, then cut them for the long side and, using a tea spoon, remove the central part holding by the extracted pulp.
Mince the onion and light fry it with the thyme (the quantity is at you choice), the meat and the pulp of zucchini. Cook for about five minutes.
Soak bread crumbs with milk and after it has absorbed all the liquid mix it with the cooked meat, a bunch of grated parmesan cheese, salt and pepper.
Fill the zucchini with this mixture and sprinkle with olive oil.
Cook in the oven at 180°C until crusty.

Insalata di farro - Spelt salad

Una delle cose che mi piacciono di piu' dell'estate è che si mangiano un sacco di piatti freddi ricchi di colori che si possono preparare con largo anticipo.
Questa mattina si è deciso di proseguire le temibili grandi pulizie di primavera (un po' in ritardo :P) e quindi non c'era molto tempo per cucinare per cui la scelta è caduta su una bella insalatona di farro con basilico, olio, pomodorini e olive.
Non è certo una ricetta elaborata, basta lessare il farro e aggiungere il resto, ma è buona, fresca e piu' originale dell'insalata di riso...

One of the things I like more about late Spring or Summer is that you can eat colorful cold dishes prepared in advance.
This morning we have decided to go on with Spring cure (I know, we are terribly late...) so the time to be spent in the kitchen has been dramatically shortened. For this reason I've chosen to cook one of my favorite cold dishes: spelt salad with little tomatoes, olive oil, basil leaves and green olives.
It's a very simple recipe, you should only boil spelt and mix it with the other ingredients, but it's good, fresh and more original than a rice salad...

Caffè shakerato - Shakered coffee

Quando le giornate iniziano a scaldarsi il buon vecchio caro caffè espresso diventa decisamente meno piacevole.
Lo scorso anno ci è stato regalato uno shaker e quindi lo abbiamo collaudato con la versione piu' estiva dell'espresso, il caffè shakerato. Oggi lo abbiamo ripetuto e devo dire che d'estate è decisamente l'opzione di caffè che preferisco.

When it's becoming hotter and hotter, the beloved caffè espresso is less lovely.
Last year we received a shaker and we tested it with the summer version of espresso: the shakered coffee. Today we repeated the experiment and I've to say that, during summer, this is my preferred version of espresso...


Caffè shakerato

Ingredienti per 2 persone
  • 8 cubetti di ghiaccio
  • 2 caffè espresso caldi
  • 1 cucchiaio di zucchero di canna
  • 1 cucchiaio di sciroppo di vaniglia

Shakered coffee

Ingredients for 2 persons
  • 8 ice cubes
  • 2 hot espressos
  • 1 spoon sugar cane
  • 1 spoon of vanilla syrup



Beh, non è molto difficile... Mischiare tutti gli ingredienti nello shaker e scuotere sino a quando il ghiaccio si è sciolto completamente.

It's not really difficult... Mix all the ingredients in the shaker and shake till the ice is completely melted.

Stampini per uova sode - Egg molds

Sono arrivati!!!
Ci hanno messo un mese in piu' di quanto stimato, ma si sa... le poste italiane non sono proprio quello che si dice un fulmine di guerra.
Avevo cercato un po' qua e la' su ebay qualche cosa di poco costoso e simpatico con cui collaudare il mio account e la scelta è caduta sugli stampini per modellare le uova sode. Saranno anche inutili, ma sono davvero simpatici!!!

Soba con tonno e pistacchi - soba with pistachios and tuna fish

Povero blogghino semi-abbandonato!
E' davvero un periodaccio: gente che va e viene dagli states da salutare e ospitare, lavoro che piu' caotico di cosi' difficilmente potrebbe essere, grandi pulizie in casa e tanta tanta stanchezza...
Devo dire che il blogghino, a cui già dedico poco tempo, è passato un po' in secondo piano, ma anche la cucina non gode di molte attenzioni.
In realtà qualche esperimento lo faccio, scopiazzando qua e là fra altri blog. Propongo qui la ricetta presa da questo blog che è stata davvero una fantastica rivelazione.

Soba con tonno e pistacchi

Ingredienti per 2 persone
  • 150g di soba
  • 200g di tonno fresco
  • 1 pugno di pistacchi
  • 1 cucchiaio di olio d'oliva
  • 1 cucchiaio di salsa di soia

Soba with tuna fish and pistachios

Ingredients
  • 150g soba
  • 200g fresh tuna fish
  • 1 fist of pistachios
  • 1 spoon of soy sauce
  • 1 spoon of olive oil



Cuocere la soba in acqua bollente salata per un paio di minuti, scolarla e raffreddarla sotto acqua corrente fredda.
Lasciar marinare il filetto di tonno tagliato a pezzetti nell'olio e nella salsa di soia per qualche minuto e poi cuocerlo in padella.
Nel frattempo, sbucciare i pistacchi mettendoli a mollo in una tazza di acqua bollente e tritarli grossolanamente. Impiattare il tutto e... buon appetito!

Boil the soba for a couple of minutes in salted boiling water than strain it and cool it under cold water.
Leave for some minutes the tuna fish cut into small pieces in the mixture of oil and soy sauce and than cook it in a pan.
In the meantime, peel pistachios putting them in a cup of very hot water. Mince them .
Compose the dish and enjoy!

Torta di compleanno - birthday cake

Ebbene sì, anche quest'anno il maritone ha compiuto gli anni.
E, come al solito, era a spasso in bicicletta con i suoi amici.
Dopo 4 giorni di pedalata volevo che trovasse una torta simpatica, frizzante e fresca ad attenderlo per i festeggiamenti... et voila.

Even this year my husband had his birthday and, as usual, he was around with his friends for their annual bike trip.
After four days riding a bike I wanted to make him find a nice and fresh-looking cake for the celebration...et voila.



Torta alle fragole

Ingredienti
  • 125g di biscotti secchi
  • 60g di burro
  • 150g di panna fresca
  • 120g di ricotta
  • 75g di zucchero a velo
  • fragole
  • 1 lime

Strawberries cake

Ingredients
  • 125g cookies without cream
  • 60g butter
  • 150g fresh cream
  • 120g ricotta
  • 75g icing sugar
  • strawberries
  • 1 lime



Preparare la base della torta sbriciolando i biscotti molto finemente, quasi ad ottenere una specie di farina. Aggiungere il burro sciolto e mettere il composto in una tortiera ad anello da 18cm foderata con carta da forno pressando bene sul fondo.
Tagliare un po' di fragole a pezzetti piccoli e formare uno strato sopra ai biscotti. Mettere in frigorifero.
In una ciotola mescolare la ricotta con lo zucchero e il succo di mezzo lime. Aggiungere la panna montata e mescolare sino ad ottenere un composto omogeneo.
Mettere la crema sopra alle fragole e livellare bene.
Far riposare una notte in frigorifero e decorare poi con la parte di lime rimasta, le fragole e ciuffetti di panna montata.

Prepare the cake base reducing to dust the cookies and mixing them with melted butter. Cover a cake tin that can be easily opened with greaseproof paper and press the cookies-butter mixture on its bottom. Cut strawberries into small pieces and put a layer on the cake base. Put to rest in the fridge while preparing the cream.
Mix togheter ricotta , sugar and the juice of half a lime. Add then whipped cream and mix till homogeneous.
Put the creamon strawberries and put to rest in the fridge for a whole night.
Decorate with straberries, the remaining part of lime and whipped cream.

Tortini salati agli asparagi - Mini quiches with asparagus

Oggi e' stata una giornata di attesa. Domani partiremo per una due giorni di
passeggiata in montagna e la voglia di incontrarsi con amici che non si vedono da tempo e di abbandonare il lavoro dove giornate intere trascorrono senza che si dica una parola e' davvero tanta.
Speriamo che il tempo ci grazi e che il sole illumini il sentiero che ci portera'
dritto dritto a Recco per una bella scorpacciata di focaccia.
Come buon auspicio, per cena ho deciso di portare la primavera in tavola preparando delle tortine salate con gli asparagi da gustare con una bella insalata di songino.

Today has been a waiting day. Tomorrow we will leave for a couple of days on a mountain path that will bring us straight to Recco to taste the wonderful "focaccia di Recco". The though of meeting old friends has made bearable spending the day without saying a word as often happens in my office where, unfortunately, there is not a friendly atmosphere.
Let's hope that tomorrow sun will shine over us.
For dinner I've prepared some mini quiches with asparagus and a good salad as side dish. Spring is on the table...



Tortini di asparagi

Ingredienti
  • 350g di asparagi
  • 80g di philadelpia
  • 30g di ricotta
  • 1 uovo
  • basilico tritato
  • sale e pepe

Mini quiches with asparagus

Ingredients
  • 350g asparagus
  • 80g cream cheese
  • 30g ricotta
  • 1 egg
  • minced basil
  • salt and pepper



Cuocere gli asparagi in acqua bollente salata per una decina di minuti. Scolarli e tritarli grossolanamente con la mezza luna.
In una ciotola capiente mescolare gli asparagi con la ricotta, il philadelphia, il basilico tritato, il sale e il pepe nero appena macinato.
Per ultimo, aggiungere l'uovo e mescolare bene in modo da uniformare il composto.
Foderare con la pasta sfoglia (sigh, io non avevo tempo di farla per cui ho acquistato quella gia' pronta) e lacarta da forno gli stampini e riempirli con la crema. Cuocere in forno a 180°C per 25 minuti.

Boil the asparagus in salted water for 10 minutes. Drain and roughly mince them.
In a bowl mix asparagus with ricotta cheese, cream cheese, minced basil, salt and grinded black pepper.
Add the egg and mix well till the cream is homogeneous.
Cover with grease proof paper and puff paste the molds and fill them with the cream. Cook in the oven at 180°C for 25 minutes.

Pasta fresca - Fresh pasta

Caspita, è veramente un periodo frenetico! Tra il lavoro, la primavera che invita ad uscire, le preoccupazioni per il terremoto in Abruzzo e per gli amici che là vivono e la Pasqua, ho trascurato il blog-ricettario.
Insomma, qui si continua a spignattare, ma non ci sono foto nè ricette scritte.
E in mezzo a tutta questa frenesia l'unica cosa che ho fatto bene e con calma è stata la pasta all'uovo.
Che bello ricordarsi della mia nonna che la faceva e di quanto sembrasse una festa veder uscire ravioli, tagliatelle e "taiarin" dalle sue mani e dalla mitica macchinetta stendipasta Imperia che, secondo un mio amico modenese, si chiama anche nonna papera...

This is a really frantic period: work, Spring that invites to go out to enjoy the warm April sun, concerns about Abruzzo earthquake and friends who live there, Easter... All these things made me abandon my blog-recipes collection.
At the end here we are carrying on cooking but I have no photos nor written recipes.
In all this frantic turmoil the only thing I've properly done is pasta all'uovo.
How beautiful is to remember my granny cooking it. Everything seemed to be happy when she produced ravioli, tagliatelle and spaghetti...



Pasta all'uovo

Ingredienti
  • 350g di farina 00
  • 150g di farina 0
  • 4 uova
  • 5g di sale

Fresh pasta

Ingredients
  • 350g all purpose flour
  • 150g whole durum flour
  • 4 eggs
  • 5g salt



Mettere tutti gli ingredienti secchi sulla spianatoia, fare la classica fontana e mettere al centro le 4 uova leggermente sbattute.
Impastare vigorosamente sino ad ottenere un composto omogeneo e umido. Se necessario aggiungere un pochino di acqua.
Dividere l'impasto in quattro parti e avvolgere ciasquna nella pellicola. Lasciar riposare per circa mezz'ora e iniziare a stendere la pasta.
Io ho usato l'Imperia della nonna, ma con tanta pazienza si può tirare la pasta anche con il mattarello.
Una volta raggiunto lo spessore desiderato tagliare la pasta e, se non la si consuma subito, lasciar seccare.
Questa pasta cuoce davvero in pochissimo tempo,

Put all the dry ingredients where you plan to knead, make a hole in the middle and put there the lightly beated eggs. Knead vigorously till obtain a wet and homogeneous ball. Cut it in four parts and wrap each of them in a piece of cling film. Put to rest for nearly half an hour and then start to spread out the pasta.
I've used the dedicated machine but it can be done also with the rolling pin.
Once you have reached the desired thickness cut the pasta and, if you don't cook it immediately let it dry.
This pasta should be boiled for few minutes.

Cialde! - Waffles!

Circa tre anni fa, in preda ad un raptus culinario, ho acquistato un ferro per cialde e ho subito tentato di produrre questi bei biscottoni seguendo la ricetta che accompagnava il ferro: un enorme disastro! La pastella, decisamente troppo liquida, si è sparsa ovunque e per ripulire la cucina ci ho messo un sacco di tempo. Senza contare la delusione che mi ha accompagnata per tutto il giorno. Poi, per tre anni, piu' nulla.
Qualche settimana fa pero', mia sorella mi ha mandato un link alla "Cucina Italiana" dove c'era una ricetta per la pastella e quindi ci ho riprovato. Questa volta le cialde sono venute e, accompagnandole con gelato, marmellata o panna montata, è stato davvero un successone.
Devo lavorare ancora un po' sulla cottura: nella foto ci sono cialde di colori diversi, ma cio' che cambia è solo la durata del tempo di cottura...

Roughly three years ago I bought an iron mould to make waffles and I tried to do them immediately after following the recipe suggested on the iron package: a terrible mess! The batter was too liquid and it spread all around in the kitchen. I was very disappointed and I spent a lot of time cleaning the mess. For the following three years I've completely forgotten the iron. Some weeks ago my sister sent me a link to the "Cucina Italiana" where I found a different recipe and I tried it: wonderful!!! These waffles are perfect to side a cream gelato or to be tasted with jam.
I still have to work on cooking time: in the picture you can see waffles with different colors cooked for different times.



Cialde

Ingredienti
  • 120g farina
  • 75g zucchero semolato
  • 40g latte
  • 1 uovo
  • 40g burro
  • sale

Waffles

Ingredients
  • 120g all purpose flour
  • 75g caster sugar
  • 40g milk
  • 1 egg
  • 40g butter
  • salt



Mescolare con una frusta l'uovo, la farina, lo zucchero e un pizzico di sale. Aggiungere il latte a filo e, per ultimo, il burro fuso freddo. Mescolare sino a quando la pastella sarà del tutto priva di grumi.
Nel frattempo, ungere con un po' d'olio il ferro e scaldarlo bene sul fuoco per circa due minuti. Eliminare l'olio in eccesso con un tampone di carta da cucina.
Mettere una cucchiaiata di pastella al centro del ferro, chiudere e cuocere a fuoco basso per circa due minuti per lato.
Sformare la cialda e darle laforma che si vuole quando è morbida.

Whisk the egg together with flour, sugar and a pinch of salt. Add milk and, at the and, cold melted butter.
Continue to whisk until without lump.
In the meantime, oil the iron and heat it up on the fire for nearly two minutes then remuve the oil using some kitchen paper. Put a spoon of batter at the center of the hot iron, clos and cook on a very low fire for two minutes per side.
Extract the waffle from the iron and model it in the shape you want when still soft.

Pane e prosciutto - bread with parmesan and ham


Poco tempo fa ho trascorso un week end a Parigi e le fantastiche boulangeries francesi mi sono proprio rimaste nel cuore.
Se poi si considera che il profumo del pane appena sfornato è una delle cose che preferisco, si capisce come domenica mattina io non abbia resistito alla tentazione e mi sia improvvisata fornaia con questa ricetta di pane al parmigiano e prosciutto che ho trovato nel ricettario Kenwood chef.

Few days ago I spent a week end in Paris and I still have in my heart the wonderful French bakeries.
If you consider that I absolutely adore the sent of a bread loaf just come out of the oven, you can easily understand how I couldn't help to become a Sunday morning baker cooking this wonderful parmesan and ham bread.
I've found the recipe on the kenwood chef book.



Pane al parmigiano e prosciutto

Ingredienti per 2 pagnotte
  • 450g farina tipo 0
  • 50g parmigiano grattuggiato
  • 1/2 cucchiaio di sale
  • 1/2 cucchiaino di pepe nero
  • 12.5g di lievito di birra fresco
  • 1 cucchiaio di olio d'oliva
  • 250ml di acqua tiepida
  • 70g di prosciutto

Parmesan and ham bread

Ingredients for 2 loaves
  • 450g durum wheat flour
  • 50g grated parmesan cheese
  • 1/2 spoon of salt
  • 1/2 teaspoon grated pepper
  • 12.5g yeast
  • 1 spoon olive oil
  • 250ml warm water
  • 70g ham



Impastare bene farina, parmigiano, sale, pepe, lievito e olio aggiungendo l'acqua tiepida gradualmente in modo da potersi fermare se i 250ml indicati sono troppi o da aggiungerne se troppo pochi. L'impasto dovra' risultare omogeneo ed elastico.
Lasciare lievitare al caldo per circa un'ora in modo da veder raddoppiato il volume.
Portare l'impasto sulla spianatoia e impastarlo per un minuto in modo da far uscire l'aria inglobata nel processo di lievitazione.
Dividere l'impasto a meta' e creare 2 dischi dello spessore di circa mezzo cm. Su ciascun disco procedere nel seguente modo: ricoprire con 1/4 del prosciutto metà disco e ripiegare su di essa l'altra metà schiacciando un pochino per far uscire l'aria. Ricoprire con il prosciutto rimasto e arrotolare ripiegando i bordi in modo da sigillare la pagnotta.
Dare una forma allungata e disporre su una teglia infarinata.
Coprire con un canovaccio pulito e lasciar lievitare per circa 1/2 ora.
Scaldare il forno a 200°C.
Prima di infornare, fare 5 o 6 tagli in diagonale sulle pagnotte, spennellare con un po' d'acqua e cospargere con farina gialla.
Cuocere per 25-30 minuti.

Mix together flour, parmesan, salt, pepper, yeast and oil adding gradually some warm water (250ml is just a suggestion, the quantity depends on the flour you are using)till you obtain a homogeneous and elastic dough. Put in a warm place to rise for an hour. You will see it doubling its volume.
Knead for a minute in order to let the air go out from the dough and divide it in two parts.
For each of these two parts go on in this way: obtain a disc 1/2 cm thick an put 1/4 of the ham on one half of it. Cover the ham with the other half pressing a little bit to remove the air. Cover with another 1/4 ham and roll pushing the ends of the roll inside it.
Give to the dough a long shape and put the two loaves spaced out on a baking tin sprinkled with flour. Cover and set aside for half an hour and switch the oven on at 200°C.
Just before putting in the oven make 5-6 cuts on the loaves, sprinkle with water and spread with corn flour.
Bake for 25-30 minutes.

Quando ero piccola qualche volta capitava che il mio babbo cucinasse qualche cosa e il suo "pezzo forte" era questo risotto. In realtà la ricetta arrivava dalla moglie del macellaio del paese, ma per me è sempre rimasto il risotto del mio papà.
E' un piatto un po' strano perche' risulta molto cremoso e alla morbidità del latte e alla delicatezza del prosciutto associa il sapore forte del peperone, ma devo dire che a me e al maritone piace proprio tanto.

When I was a child, sometimes our father cooked something for us and his "masterpiece" was this risotto.
He obtained the recipe by our village butcher's wife but, for me, this will always be my daddy's risotto.
It's a strange recipe because it's really creamy and associates milk smoothness and ham delicacy to the strong pepper taste, but I have to say that both me and my husband appreciate it very much.



Risotto con latte, prosciutto e peperone

Ingredienti per 2
  • 150g riso
  • 3/4 di peperone rosso
  • 70g di prosciutto
  • 1/2 bicchiere di latte
  • brodo
  • parmigiano
  • burro

Risotto with milk, ham and pepper

Ingredients for 2
  • 150g rice
  • 3/4 red pepper
  • 70g ham
  • 1/2 glass of milk
  • stock
  • parmesan cheese
  • butter



Sciogliere un po' di burro in una pentola e soffriggere per 5 minuti il peperone tagliato a pezzetti e il prosiutto tritato. Aggiungere il riso e farlo tostare per qualche minuto.
Ricoprire il tutto con il brodo e far cuocere a fuoco basso sino a quando il brodo si riduce. Al momento di aggiungere altro liquido per evitare che si bruci tutto, aggiungere il latte e continuare la cottura aggiungendo, se necessario, altro brodo.
Una volta cotto spegnere il fuoco e condire con un pezzettino di burro e un'abbondante spolverata di parmigiano grattuggiato.

Melt a small piece of butter in a pot and lightly fry for 5 minutes the pepper cut in small pieces and the minced ham.
Add the rice and toast it for a while then cover with stock and cook over a low fire. When it's time to add some liquid in order to avoid to overcook everything, add the milk and go on cooking adding, if necessary, some more stock.
Once cooked, switch off the fire and season with a small piece of butter and some grated parmesan cheese.

Contorno di lenticchie - lentils side dish

Finalmente è tornato il sole e con esso una gran voglia di primavera.
In effetti ho il balcone in grande spolvero con primule, ciclamini e tulipani che stanno spuntando e si iniziano a fare delle belle gite in bicicletta durante il week end.
Il problema è che in casa c'erano ancora un po' di cose "invernali" da smaltire tra cui un bel cotechino e una scatola di lenticchie che prontamente è stata cucinata e mangiata in piu' riprese come contorno o per condire la pasta insieme a un cucchiaio di ricotta.
Arrivederci inverno!!!

At the end the Sun has come and now I really want Spring with warmer temperatures.
My balcony is full of flowers such as primroses, cyclamens and growing tulips and during week end we have started to make some beautiful trips riding our bicycles.
In my kitchen closets there were still some "winter" ingredients and so I prepared a lentils side dish that we have used actually as a side and also to dress pasta together with a spoon of ricotta cheese.
Goodbye Winter!!!



Contorno di lenticchie

Ingredienti
  • 400g di lenticchie
  • 1 cipolla
  • 1 carota
  • 1 gambo di sedano
  • 200g di passata di pomodoro
  • sale
  • olio di oliva
  • 3 foglie di alloro

Lentils side dish

Ingredients
  • 400g lentils
  • 1 onion
  • 1 carrot
  • 1 branch of celery
  • 200g tomato sauce
  • salt
  • olive oil
  • 3 bay leaves


Tritare bene carota, cipolla e sedano e farli soffriggere per qualche minuto in un po' di olio d'oliva.
Aggiungere le lenticchie e mezzo cucchiaino di sale (o un dado). Mescolare bene e versare la passata di pomodoro.
Ricoprire di acqua e aggiungere le tre foglie di alloro.
Far cuocere per un'ora e mezza almeno a fuoco lento. Assaggiare ed eventualmente aggiustare di sale.


Mince carrot, onion and celery and lightly fry them for some minutes with some olive oil.
Add lentils and half a teaspoon of salt or a stock cube. Mix very well and add tomato sauce. Mix well again and then cover everything with water. Add the bay leaves and cook over low flame for an hour and a half at least.
Taste and if necessary add some salt.

Japanese style soufflé cheesecake


Qualche giorno fa siamo stati invitati a cena da un nostro caro amico e ho deciso di preparare un dolce un po' originale. Avevo trovato la ricetta molto tempo fa e avevo provato questa torta un paio di volte rimanendo piacevolmente sorpresa dalla delicatezza del sapore, ma mi ero completamente dimenticata del fatto che essendo una specie di soufflé, il suo aspetto non era mai stato, come dire, presentabile...
Anche questa volta l'aspetto ha lasciato molto a desiderare per cui sono ricorsa ad una ricopertura strategica di mandorle a scaglie e ad una "vestizione" non proprio impeccabile, ma il sapore era decisamente piacevole.

Some days ago we have been invited for dinner at one of our best friends place and I've decided to prepare an original dessert. I've found this recipe a lot of time ago and all the two times I've baked this cake I've been pleasently surprised by its delicate taste. Unfortunately I've completely forgot the fact that, being a kind of soufflé, the cake aspect has never been perfect so I had to disguise the cake covering it with almond flakes and "dressing" it in a funny way.


Japanese soufflé cheesecake

Ingredienti
  • 200g di philadelphia yo
  • 50ml di latte
  • 3 uova
  • 100g di zucchero
  • 30g di maizena
  • succo di un limone
  • 1/2 cucchiaino di lievito
  • marmellata di albicocche
  • scaglie di mandorla

Japanese soufflé cheesecake

Ingredients
  • 200g cream cheese
  • 50ml milk
  • 3 eggs
  • 100g sugar
  • 30g cornstarch
  • 1 lemon juice
  • 1/2 teaspoon baking powder
  • apricot jam
  • almond flakes


Mescolare il formaggio con il latte sino a scioglierlo completamente in una crema semiliquida e priva di grumi.
Aggiungere 50g di zucchero, i tuorli , la maizena, il succo di limone e il lievito. Mescolare bene sino ad avere una crema.
Montare a neve ferma gli albumi e aggiungere ad essi, in due o piu' riprese, gli altri 50g di zucchero.
Unire gli albumi zuccherati alla crema mescolando il più delicatamente possibile.
Foderare una teglia da 18cm con carta da forno. Riempire la tortiera con la crema e far cuocere in forno a bagno maria per 35-40 minuti ad una temperatura di 180°C.
Sformare quando ancora tiepida.
Scaldare un cucchiaio di marmellata di albicocche e spennellare la superficie della torta. Ricoprire con le scaglie di mandorla.

Mix cream cheese with milk until soft. Add half of the sugar, egg yolks, cornstarch, lemon juice and baking powder and mix well till creamy.
Whisk egg whites until they form stiff peaks and add the remaining 50g of sugar in two or more batches.
Add egg whites to the cream and mix as gently as possible.
Cover a 18cm cake pan with greaseproof paper and fill it with the cream. Bake at 180°C at bain-marie in the oven for about 35-40 minutes.
Take the cake out of the mould when it is still warm.
Melt a tablespoon of apricot jam heating it and spread it on the cake surface. Cover with almond flakes.

Zuppa di carote e miso - Carrot and miso soup


Lo scorso anno, per il mio compleanno, il maritone mi ha regalato questo fantastico libro.
Non è da molto che ho assaggiato per la prima volta la cucina giapponese, ma mi è subito piaciuta tantissimo per la freschezza degli ingredienti e anche per come i piatti sono presentati, che dire... anche l'occhio vuole la sua parte...
Finalmente sono riuscita a trovare un po' di ingredienti giapponesi anche dalle mie parti e quindi era troppo difficile resistere alla tentazione di cucinare qualche cosina gustosa presa dal libro di Harumi Kurihara.
Ehm, al posto del brodo granulare di pollo suggerito dal libro io ci ho messo quello vero perchè me ne era avanzato un po' e ho un po' cambiato le proporzioni ma la ricetta è davvero veloce e il risultato, soprattutto quando fa freddo come nelle ultime sere, è davvero confortante.
Pare che il libro non sia stato ancora tradotto in italiano, ma se vi capita di trovarlo beh, sfogliatelo e ditemi se non è fantastico...

Last year, for my birthday, my husband gave me as a present this wonderful book.
It has not passed a lot of time since I first tasted Japanese kitchen, but I liked it from the very first moment because of the freshness of the ingredients and, why not, for the presentation of dishes.
Finally I managed to find some Japanese ingredients also in Milan-Pavia area and I couldn't resist from trying some recipes form Kurihara's book. I've used real stock instead of the granulated one suggested in the book because it was available in my kitchen and I've sligthly changed proportions, but this recipe is really fast and the result, especially during cold winter evenings, is really a comfort...


Zuppa di carote e miso

Ingredienti per 2
  • 1 carota
  • 2 tazze di brodo di pollo
  • 70g di pancetta a dadini
  • 1 cucchiaio di olio d'oliva
  • 2 cucchiai di sedano tritato
  • 1/2 cucchiaino di miso
  • prezzemolo o coriandolo
  • pepe

Carrot and miso soup

Ingredients for 2
  • 1 carrot
  • 2 cups chicken stock
  • 70g small cubes of bacon
  • 1 tablespoon olive oil
  • 2 tbs finely chopped celery
  • 1/2 teaspoon miso
  • parsley or coriander
  • pepper


Tagliare la carota a pezzetti di circa 2cm e farla cuocere nel brodo bollente usando la tecnica del "drop lid", cioè appoggiando un disco di carta da forno direttamente a contatto con il brodo in modo da avere un coperchio di carta a contatto con il brodo. Serve a distribuire in modo uniforme il calore durante la cottura.
In un padellino a parte, soffriggere la pancetta nell'olio e, una volta croccantina, aggiungere il sedano tritato finemente.
Una volta che le carote sono cotte, schiacciarle nel brodo rimasto, aggiungere sedano e pancetta e riportare il tutto a bollore.
Spegnere il fuoco, aggiungere il miso e farlo sciogliere. Condire con pepe e con prezzemolo tritato (in realtà sarebbe coriandolo, ma io non lo avevo...)

Cut the carrot in 1 inch thick pieces and cook it in the boiling stock using the drop lid technique. (put a lid of grease proof paper in direct contact with the stock to distribute in a uniform way the heat.
Light fry the bacon with olive oil and once it is crispy add the finely chopped celery.
Once carrots are cooked, mash them in the remaining stock and add bacon and celery. Bring to boil and turn the fire off. Add miso and let it melt in the soup. Season with pepper and parsley (or coriander, but I hadn't it...)

Pappardelle con sugo al pesto di pistacchio


Io adoro la Sicilia!
E' una regione fantastica ed una fonte inesauribile di idee culinarie. Quest'estate la mia mamma ci è andata in vacanza ed è ritornata con una discreta quantità di leccornie tra cui un vasetto di pesto di pistacchi.
Inutile dire che il vasetto è stato finito in pochissimo tempo e che a tutti noi è rimasto il ricordo di quella pasta come di una delle migliori mai mangiate.
Questa mattina ho deciso che era il caso di tentare di riprodurla per cui ecco qui il risultato dei miei sforzi. Direi che l'esperimento è riuscito!

I love Sicily!
It's a wonderful region and it's typical kitchen is really one of my preferred. Last summer my mother spent there some days and she came back with a lot of gorgeous things to eat. Among them there was a little pistachio pesto jar. We used it with pasta and sincerely it was one of the best pasta dishes I've ever eaten.
This morning I decided to try to recreate it in my kitchen and here ther's my experiment result. I dare say it was a successful experiment!



Sugo al pesto di pistacchi

Ingredienti
  • 70g di pistacchi
  • 3 cucchiai di olio evo
  • 2 cucchiai di parmigiano grattuggiato
  • 1 cucchiaino di sale
  • 3/4 di bicchiere di latte intero
  • 70g di dadini di prosciutto
  • 1/4 cipolla
  • 1 pezzettino di burro
  • pepe

Sauce with pistachio pesto

Ingredients
  • 70g pistachios
  • 3 tablespoons olive oil
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon salt
  • 3/4 whole milk glass
  • 70g small cubes of ham
  • 1/4 onion
  • 1 small piece of butter
  • pepper


Frullare i pistacchi con il sale, l'olio e il parmigiano.
Soffriggere la cipolla tritata nell'olio e aggiungere poi i dadini di prosciutto. Far saltare per qualche minuto e versare i pistacchi frullati e il latte. Aggiungere una spolveratina di pepe macinato e far cuocere per 5-7 minuti.
Condire la pasta con la salsa così ottenuta.

Whisk pistachios with salt, oil and parmesan cheese.
Lightly fry the minced onion and add ham little cubes. Cook for some minutes and add pistachios and milk. Sprinkle with ground pepper and cook for 5-7 minutes.
Use this sauce to season pasta.

torta ricotta e cioccolato - ricotta and chocolate cake


Il 2009 è iniziato con una gran nevicata!!!
Mi sembra di essere tornata a quando da piccola guardavo ammirata scendere i fiocchi di neve e imbiancare tutto! Era una festa quando, nel paesino dove abitavo, passava lo sparti-neve e creava ai lati della strada dei mucchi di neve ben più alti di me. Era il 1985 e forse all'epoca apprezzavo la neve molto più di quanto faccio ora. In effetti, dopo l'inutile e faticosissima spalata di questa mattina, la neve inizia quasi a starmi antipatica...
Speriamo di riuscire a tornare al lavoro almeno domani.
Per non sprecare del tutto la giornata, ho fatto una torta buona buona da mangiare sorseggiando un buon tè. La ricetta mi è arrivata facendo un giro strano: dovrebbe essere pugliese, ma arriva dalla zia di una mia amica giapponese che abita in California. Ovviamente io l'ho un po' modificata, ma mi fa sorridere tutta la strada che la ricetta ha percorso...

2009 has started with a huge snowfall!!!
I feel the same as I was a child and, enchanted, looked through the window those little smow flakes falling from the sky and covering everything with white. It was a joy when the snowplough came in the little town where I lived and created a mountain of snow much taller than me . Maybe now I don't appreciate snow so much, especially after the useless and tiring shoveling of this morning.
I hope to be able to come back to work tomorrow morning.
Not to completely waste the day I've baked a very good cake whose recipe has gone all over the world: I had it from a Japanese friend who lives in California, but it should originally come from the south part of Italy. I've slightly changed it but I smile thinking to all the road this recipe has done...



Torta di ricotta e cioccolato

Ingredienti per la pasta
  • 100g di burro
  • 80g di zucchero
  • 300g di farina
  • 1 uovo
  • 1 pizzico di sale
  • 1 bustina di lievito

Ingredienti per la crema
  • 300g di ricotta
  • 80g di zucchero
  • 70g di gocce di cioccolato
  • 1 uovo
  • buccia grattugiata di 1/2 limone
  • 1 cucchiaio di marsala

Ricotta and chocolate cake

Ingredients for the crust
  • 100g butter
  • 80g sugar
  • 300g flour
  • 1 egg
  • a pinch of salt
  • 16g baking powder

Ingredients for the cream
  • 300g ricotta cheese
  • 80g sugar
  • 70g chocolate chips
  • 1 egg
  • grated zest of 1/2 lemon
  • 1 tablespoom marsala


Per la crema:
Lavorare la ricotta e lo zucchero sino a non avere piu' grumi. Aggiungere l'uovo, le gocce di cioccolato, la buccia di limone e il marsala. Mescolare bene sino ad ottenere una crema omogenea.
Per la pasta:
Setacciare insieme lievito e farina. Aggiungere lo zucchero e il sale. Al centro del miscuglio farinoso mettere il burro a pezzetti e l'uovo. Impastare tutto rapidamente con la punta delle dita. Tenere da parte un po' di impasto per decorare la torta estendere il resto con un mattarello sino ad avere uno spessore di mezzo centimetro al massimo.

Rivestire una tortiera con carta da forno e adagiarvi sopra la pasta. Riempire con la crema e decorare col la pasta che si è tenuta da parte.
Infornare a 180°C per circa 40-45 minuti.

For the cream:
Mix together ricotta and sugar till homogeneous. Add egg, chocolate chips, lemon zest and marsala and mix well till smooth.
For the crust:
Sieve on a table baking powder and flour. Add sugar and salt and place in the middle butter cut in small pieces and egg. Knead really fast with the fingers' top. Keep some dough for decoration and use the rolling pin on the other dough to obtain a layer thick 0.5cm as maximum.

Cover a cake mould with the dough and fill it with the cream. Decorate with the remaining dough and put in the oven at 180°C for roughly 40-45 minutes.
